Therefore, the situation when it is impossible to cook jellied meat in 1 sitting is quite common. The nuances are as follows:

  1. In the first stage of cooking, cook the jellied meat for at least 1,5 hours so that all the meat and greasy parts are cooked at least until tender. Undercooked meat is less well stored – and as a result, this will lead to a decrease in the shelf life of the dish.
  2. Put unassembled jellied meat in the cold. For example, if you urgently need to take a break, you can cool the jellied meat very quickly – just fill the sink with cold water and put a pot of jellied meat in it. Usually, jellied meat is boiled in winter, so you can put it on the balcony, on the windowsill with an open window, and then it is best to put the cooled jellied meat in the refrigerator so that it does not freeze in the cold.

Scheme of actions for the next day:

  • 1. Heat the jellied meat, be sure to over low heat. If the jellied meat is frozen, say on the balcony, melt it with a sink with hot water.
  • 2. Add jellied meat.
  • 3. Disassemble and pour the jellied meat into molds.
  • 4. Remove in the cold and wait for solidification.
