Is it possible to cook compotes with seeds?
An interesting question to which there is no single answer. As long-term practice shows, it is possible, no one has been poisoned yet, but still you should not discount the negative property of hydrocyanic acid.
Indeed, this harmful substance is present in certain types of products, however, even those fruits and berries that contain hydrocyanic acid are quite safe if:
- Add granulated sugar during cooking: it has been proven that sugar reacts with hydrocyanic acid and neutralizes it, respectively, the more sugar you put in the compote, the better.
- Use heat treatment: for example, at temperatures above 75 degrees, toxic substances are completely destroyed, hence the conclusion – it is compotes that are completely safe to use, but it is impossible to prepare the same tincture from fruits and berries containing seeds.
Note – if you somehow manage to accidentally swallow a few cherries with pits, do not worry. The content of hydrocyanic acid in them is so scanty that everything will leave the intestines much earlier than the release of poison begins.
Do not abuse the kernels of peach and apricot, and other representatives of the Rosaceae family, and you will not face poisoning with hydrocyanic acid.
