What kind of vitamins in buckwheat?

Everyone knows buckwheat groats in Poland. We reach for it more or less often, not always accepting its specific taste. He owes it to roasted grains. However, you can get unroasted buckwheat, which is incomparably more delicate in taste. Such a version can be successfully prepared both salty and sweet.

Buckwheat is a very valuable plant (not a grain). It is a source of B vitamins and vitamin E. It contains in the composition zinc, potassium, copper, calcium, manganese, magnesium, selenium, phenolic acids, rutin, catechin. It is rich in essential amino acids, lysine and methionine, as well as dietary fiber. We have already written about the health properties of buckwheat.

What is glycemic index of buckwheat?

Ma low glycemic index (IG = 40), so it can be successfully used by diabetics and people with problems with blood sugar levels. Its addition increases the nutritional value and water absorption of the product, but also extends its durability. It has a slightly bitter aftertaste, so it is most often used in combination with other flours. It is traditionally used in Japan for production pasta (soba), in Russia for production pancakes, in Germany pancakes. You can also prepare delicious bread from it. What are the recipes of buckwheat flour?

Buckwheat crackers

Ingredients:

1 cup of buckwheat flour

½ teaspoon of baking soda

2 tablespoon of butter

3 spoons of sugar

XNUMX/XNUMX cup of water

½ teaspoon of cinnamon

A pinch of ginger, a pinch of salt

Mix the butter with sugar. In a separate bowl, combine flour, baking soda, cinnamon, ginger, and salt. Add water slowly until you get a pasty consistency. Add butter and sugar and knead by hand. Flatten the resulting ball of dough, put it in a foil bag and refrigerate for about 30 minutes. After taking it out of the fridge, roll it out thinly for cakes (preferably roll it through foil) and cut out rectangles. Pierce with a fork. Put in an oven preheated to 180 degrees Celsius for 25 minutes.

Buckwheat flour cupcakes recipe

Salty cupcakes

Ingredients:

XNUMX/XNUMX cup buckwheat flour

1 tablespoon of raw unroasted buckwheat

1 tablespoon of linseed

XNUMX/XNUMX teaspoon of baking soda

1 large egg

2 tablespoons of milk

2 tablespoons of apple sauce

1 clove of garlic

2 tablespoons of cheese

½ cup of chopped spinach

2 chopped mushrooms

1 small tomato

Salt pepper

Mix the egg with the milk and mousse. Add flour, soda, groats, seeds, garlic, pepper, salt and combine with each other. Toss in the spinach and mushrooms. Mix. Transfer to small ovenproof dishes (ramekins). Place tomato slices on top. Put in an oven preheated to 180 degrees Celsius for 35 minutes. Sprinkle the cheese over it and let it sit for a while until the cheese melts.

Recipe for buckwheat waffles

Waffles

Ingredients:

2 cups of buckwheat flour

4 teaspoon baking powder

1/3 cup of oil or melted butter

1 tablespoon of sugar or honey

1 and ¾ glasses of milk

pinch of salt

½ teaspoon of cinnamon 

½ teaspoon of cardamom

2 large eggs

Separate the whites from the yolks. Mix the yolks with the remaining ingredients. Beat the egg whites. Gently mix the proteins with the rest of the mass. Bake in a hot, greased waffle iron. Serve with fresh fruit, jam, homogenized cheese or cream.
