Is beer kvass?
Kvass has been known in our lands for a long time. Its properties are most often used by Russians and Ukrainians, where it is the national drink and it comes from these regions. It is made by fermenting wholemeal bread. It is very important what bread is made from and what water we add. Wholemeal bread made with a traditional recipe works best, without the addition of additives or preservatives. It is a probiotic product that affects our digestive system because it contains lactic acid bacteria. Due to the fact that it is made from a whole grain product (wholemeal bread), it is a source of B vitamins, zinc and selenium. Unfortunately, in Poland it is difficult to get real kvass made on bread, or, as in the case of products from beyond our eastern border, based on wholemeal rye and wheat flour with the addition of yeast. Most often it is only a drink with the taste of kvass, which often contains sugar in one of the first places in the composition (the ingredients are written in the order with the most important). They are more like malt drinks or tipped drinks. What should the composition of ideal and real kvass look like?

A certain amount of sugar or honey in acid is normal. It is added to improve the taste, but also as a nutrient for yeast. In addition, it can include dried fruit, mint leaves, currants as components that enrich the taste.
Is the bread drink kvass?
The German bread drink (Brottrunk) is a relatively new product invented by the baker Wilhelm Kanne. From Soviet soldiers returning from the war he obtained information about the health effects of pickles, so he decided to experiment with making bread. During about 15 years of experience, he obtained a recipe for his drink, which has been produced on a large scale since 1981. It is still manufactured by the company Kanne Brottrunk GmbH & Co. KG. She works with doctors and scientists to check the health effects of the drink and confirm its beneficial effects on the body. In fact, it is a very similar product to traditional kvass. The production process is strictly controlled and is made of ecological products according to a recipe created by Kanne. Importantly, this product does not contain sugar or added yeast. This distinguishes it from traditional acid. Thanks to this, it is also less caloric. It will be a better choice than acid-like drinks. However, kvass can be successfully prepared on its own. Then we have an influence on what is in it.
Is kvass healthy?
The health benefits of kvass or Brottrunk are their influence on the digestive and immune systems. In the past, it was used after fat-rich feasts as a remedy for acidity, digestive problems and flatulence. It works similarly at present, among others thanks to the enzymes it contains that aid digestion. Due to the fact that it is a probiotic product, it has a beneficial effect on the intestinal microflora, and thus indirectly affects our immunity. The presence of zinc and vitamin C also helps. The richness of vitamin B, in turn, has a positive effect on the nervous system, but also on the condition of the skin and hair. Due to the presence of sugar and additives such as raisins, it is a caloric drink. It should not be considered to have a miraculous effect on the fat content in the body. It is not a weight loss product, especially if you drink it in large amounts. When it comes to the German bread drink, its nutritional value as well as acid, but a much lower energy value speaks in favor of its use in the diet. 100 ml of this drink is only 3 kcal, while the same amount of traditional acid is about 30 kcal.
How to make kvass?
It doesn’t take much to prepare a delicious and healthy acid yourself. However, the quality of the ingredients used is important. You can use a variety of flavors, from nuts and dried fruits, through herbs, and ending with horseradish. It’s worth experimenting. Below is the basic recipe for kvass.
Ingredients:
5 liters of water
500 g of wholemeal rye bread
1 tablespoon (13 g) of yeast
100 g of sugar or honey
10 g of raisins
Preparation:
- Cut the bread and lightly bake it in the oven (you can use stale bread).
- Boil the water, mix it with sugar and set aside to cool slightly (to about 80 degrees C).
- Pour water over the bread and set aside for about 3-4 hours.
- Drain the liquid and add the yeast, then set aside for about 5 hours.
- Drain again, pour into bottles and add a few raisins to each. Leave for 2-3 days for kvass to form.
- Ready-made acid is best consumed within 5-7 days, stored in a cool place.
