In search of the best Torrija

The traditional has given way to innovation and creativity in the preparation of Torrijas, and proof of this is this fourth celebration of the National Torrijas Contest, of which we echo today.

Unctuous and delicious is sow the toast of “winter” bread that I eat, dessert, snack or breakfast, succumbs to all palates at this time, which from the beginning of the period of Lent until the celebrations of Holy Week begins to be seen in pastry shops, bars and kitchens in many Spanish establishments and homes.

The Leonese Academy of Gastronomy is the entity behind the organization of this gastronomic contest and which will bring together fifty participants who will present their products in three different varieties or categories. Traditional Torrija, Salted Torrija and Innovative Torrija.

Next February 29 is the date chosen for the presentation in society of the “delicacies that participate in the contest” prepared by the pastry chefs and chefs who have so decided, in the iconic Parador San Marcos de León.

There are many places in the national geography where Torrijas are an art, and from its capital Madrid where they are praised as if it were a “saint” to the most remote places of the national geography, their elaboration is no mystery, more well a pleasure for those who can give a good account of them.

Requirements to participate in the National Torrijas contest.

Professionals and individuals who wish to participate in the event must be accredited as “cooks” before next February 22, the deadline to be able to do it, and must register in which category of the three, their participation Torrija.

To give it a more professional character, each category will have a specific jury, made up of professionals from the pastry and kitchen sectors, who will deliberate after a blind tasting of them.

It will be necessary to prepare two torrijas of the variety we choose and present it in individual plates, so that one of them is exposed and the other serves as a snack for the jury.

It must be taken into account that the traditional version must be presented orphaned of any garnish or sauce, so that it shows its character and flavor, not in the other two varieties, that the originality and its accessories will be a good help to stand out.

If the number of participants exceeds fifty, the organization of the event, would select those who will go to the final phase of the 29th, attending to specific criteria of each category and trying to guarantee the excellence of the elaborations, so when presenting them, we describe and let’s dress the product in the best possible way.
