If the jellied meat has boiled away
Cooking jellied meat is not a complicated process, but it requires compliance with all basic cooking rules. Nevertheless, due to the inexperience of the cook, it sometimes happens that the water has boiled away. There are 2 possible options:
– If you find this during the preparation process, then just add the required amount of water. Aspic will have time to take the right amount of collagen from meat and bones and subsequently thicken.
– If the water has completely boiled away, then there are two options: either use the meat in the form in which it was cooked, or use gelatin for further cooking. The taste will lose a little, but you will save the dish. Perhaps the end result is not jellied meat, but aspic, and it can be made very beautiful by decorating with boiled vegetables and eggs. If the water has boiled over and the meat begins to dry or even fry, then of course it is necessary to digest the jellied meat from scratch.
