In general, beans should not sprout in an apartment. Even a day after soaking, the beans should not sprout. There should be many questions about the storage of beans: most likely the conditions in which they were stored were far from correct: the humidity and temperature were too high. There is no need to eat such beans, sprouts from beans sprouted in water are also unlikely to be useful.
