In our family, someone always drove something. I will never forget the smell of citrus pervach, which my grandfather drove with the help of a cyborg samovar. Grandma made homemade wine from whatever she could, and I was always sent for “condoms” for water sealing.
But my father and I surpassed everyone, because we were able to cook the real, that very Soviet vodka at home!
Story from my subscriber Gregory.
Vodka has gotten worse in the last 20 years
In our family, not a single festive table is complete without a bottle of good vodka.
Yes, I began to notice something that from year to year the quality of this very vodka, to put it more culturally, is slipping to the bottom of life. And the most interesting thing is that the price of this “bottom” growls and bites.
In the days of the USSR, I was not old enough to remember the taste of real wheat vodka, but my dad did not get tired of sighing nostalgically: “And before, what vodka was delicious!”
He and I scratched our smart heads and decided, why not try to catch up with “the one” ourselves at home. And it turned out that everything is quite simple.
Required Ingredients and Equipment
To make real Soviet vodka, we need to prepare not only the ingredients for the mash, but also the equipment.
Ingredients
For 1 liter of wheat vodka we need:
- distilled water – 14,4 l;
- wheat flour of the highest grade – 3,4 kg;
- yeast sourdough “Kodzi Angel” (Koji Angel) – 30 g (at the rate of 9 g per 1 kg of flour);
- a gas reducer (I use Bobotik drops for newborns because I have them).
Immediately I would like, as they say, to count the money:
- 3,4 kg of flour of the highest grade – 315 rubles (90 rubles per 1 kg);
- Yeast “Koji” costs around 550 rubles per pound, but since I used 30 g, we can say that I spent only 33 rubles;
- Means “Bobotik” costs in a pharmacy from 250 rubles, but it will be enough for us for hundreds of liters of wheat mash, so we will assume that we spent 10 rubles.
In total, 358 rubles is worth 1 liter of our future vodka! And now we remember how much 0,5 vodka costs in retail stores and begin to figure out the benefits of this whole event!
Equipment
For the preparation of mash and further rectification of alcohol, you need:
- capacity with hydromodule for 25 l;
- distillation cube with distillation column setting;
- thermometer;
- alcohol meter;
- Libra.
A distillation column, in simple words, is a distiller. Without it, you will not get pure alcohol, while a distillation cube is enough to get moonshine. Rectification of alcohol occurs due to the distribution of liquids with different boiling points.
The cooking process
The process of making wheat vodka is divided into 3 stages:
- Braga preparation.
- Distillation.
- Rectification.
Braga is prepared as follows:
- We scald the container with the hydromodule with boiling water for the purpose of disinfection.
- Pour 6 liters of cold water.
- Gradually add 3,4 kg of flour to the water, continuously stirring the resulting mixture until a homogeneous substance is formed.
- Add another 6 liters of water heated to 60-70°C and mix.
The higher the grade of flour, the more the mash will foam. To reduce gas formation, I add Bobotik to the mixture at the rate of 3 drops per 1 kg of flour. In our case, this is exactly 10 drops.
At least once a day, it is necessary to mix the mash and, when foam forms, add “Bobotik” 3-5 drops each
Mix the mixture of flour and water again and proceed to the breeding of Koji yeast. For 1 kg of flour we need 9 g of yeast. For 3,4 kg of flour we use 31 g of “Koji Angel”.
- Pour 125 ml of water at 35°C into a small container.
- We pour 31 g of Koji into it.
- Mix thoroughly, cover with foil, leaving gaps for oxygen access, and leave the yeast for 30 minutes.
After half an hour, add the yeast to the wheat mash, mix, cover the container with a lid with a water seal.
After another 8 hours, add another 2,4 liters of water, mix. Our mixture will ferment for several days.
Purification of the resulting rectified product and the result
The next step is the first distillation of the wort in potstill mode. The distillation cube operates at maximum temperature, as a result of which our mash turns into alcohol at a rate of up to 7 liters per hour.
Such a speed will eliminate the procedure for separating “heads” and “tails”, and the quality and taste of raw alcohol will remain on top. As a result of the distillation, we will get 390 ml of alcohol per 1 kg of flour. I got 1,329 liters.
After distillation, we connect a distillation column to the process, which will separate our raw alcohol into fractions, thereby relieving our product of a specific smell and taste.
As soon as our rectificate is ready, we get 1 liter of quality wheat vodka! Forgotten taste of the USSR! Natur product! And my dad got the opportunity to really enjoy nostalgia and no longer sighs sadly!
