Crayfish live in water and crawl along the bottom, so in any case, they should be thoroughly rinsed before cooking. Crayfish should be washed before the cooking process, and cleaned after. Before cooking, they are rinsed under running water from contamination, then soaked for a couple of hours in water so that all natural waste products leave the finished product. Soaking is carried out in a deep basin or in a bath, once an hour draining the water and letting the crayfish breathe, and then soaking the crayfish again.
