How to understand that jellied meat will freeze

When, when cooking jellied meat, products are taken to a minimum, or there is not very much time for cooking, it is best to check in advance whether the jellied meat will freeze or not. To do this, an hour before the end of boiling jellied meat:

1. Pour some broth into a small rather high container (mug) – at least a couple of centimeters.

2. Cool by placing the container with jellied meat in ice water.

3. Refrigerate for 1 hour.

4. After an hour, check the condition of the jellied meat. If it’s frozen – great, then you can turn off the heating under a saucepan with jellied meat. If not, make a discount on the fact that the jellied meat was also cooked and analyze other true signs:

– consistency: jellied meat should not be liquid oily, approximately like vegetable oil.

– boiled fatty parts: ideally, pork legs should be completely boiled down into the joints, any meat should move away from the bone without effort.
