How to store oyster mushrooms at home in the refrigerator

If you decide to prepare mushrooms for the winter, you should figure out how oyster mushrooms are stored at home. The choice of technique depends on the desired result. The product can be kept both fresh and canned. Each method has its own advantages.

Even a slightly damaged mushroom causes damage to neighboring specimens. Better to use it in powder or soup extract.

How to store oyster mushrooms: methods for the home

Depending on the shelf life and taste preferences, the following methods of storing the mushroom are chosen:

  • in a plastic container: the product will withstand about 3 days if laid in even layers. Here’s how to store oyster mushrooms in the refrigerator;
  • in a plastic wrap and a wooden veneer basket: an attractive appearance for oyster mushrooms is provided for several days;
  • salting: pre-washed and dried oyster mushrooms are soaked in salt water for about 5 days, changing the water from time to time. After the mushrooms are placed in barrels, adding more salt;
  • pickling: oyster mushrooms laid out in sterilized jars are poured with marinade with salt, vinegar, spices and rolled up for the winter;
  • drying: unwashed mushrooms are cut into slices and laid out in one layer. Oyster mushrooms that have dried up for several days are dried in the oven at 50 ° C;
  • freezing: whole specimens are poured with citric acid solution and cooled to 5 ° C, then to –30 ° C. Oyster mushrooms will be stored at –18 ° С;
  • powder: residues and scrap are dried until hardened, crushed into powder. The product is stored for a long time and kept in hermetically sealed containers;
  • soup extract: the chopped mushroom is boiled over low heat for about 30 minutes. Juice is obtained from the pressed mass. A syrup is obtained from the juice with the addition of salt. In a tightly closed glass container in a chilled form, it will stand for a long time.

By strictly observing the technology of the method, dry, salted, frozen or pickled oyster mushrooms, their powder or extract are obtained. At the same time, a product that is not exposed to temperature effects will retain more benefits. The trade-off between the possibility of long-term storage and the pristine freshness of the mushrooms is up to you.
