How to store beets
Beets are a source of vitamins and one of the most common vegetables grown in Russia. It is rich in vitamin C and removes toxins from the body. It is rarely canned, much more often it is used raw or for cooking. After harvesting, you may want to think about how to store the beets. You will learn about it in this article.
In addition to observing the storage rules, you also need to pay attention to the preparation of vegetables for storage. If you have harvested and prepared correctly, the chances of a long shelf life will increase. It is also important so that the beets do not lose their taste, remain juicy and retain vitamins.
When harvesting and preparing for winter, observe the following rules:
- Harvest before the first frost. It is best to do this on a day when there is no rain.
- After you have dug up the beets, leave them in the garden to dry out. Do this only if it is not raining. In rainy weather, bring the vegetables indoors and leave to dry for 3-4 days.
- Shake off large pieces of dirt. But don’t wash the beets. She does not need excess moisture, and a small amount of soil will help her to be stored longer.
- Prune: cut off the tops, leaving 1 centimeter. Also, trim the root and side roots a little.
- Select healthy, disease-free and rot-free roots for storage.

Beets: how to store correctly
Beets can be stored in the basement. During storage, ensure the required temperature and conditions:
- The temperature should be around 0 degrees. At a temperature of about 4 degrees, beets begin to germinate.
- Maintain a high humidity level in the cellar.
- The cellar must be ventilated.
- Punch holes in the storage boxes for ventilation.
The conditions for beets are very simple. Many people find that they are even easier than for carrots or potatoes.
There are several storage methods:
- In boxes of sand. Place the beets in the box first, and then add the sand.
- With ash. Place vegetables in a drawer and sprinkle with ashes.
- With salt. This method is similar to the previous one, but salt is used instead of ash.
- With potatoes. Place potatoes at the bottom of the drawer and beets at the top. Thanks to this, you will provide the necessary level of moisture for the beets, and, on the contrary, will save the potatoes from excess moisture.
- In simple boxes with holes. If you don’t feel like bothering.
