How to remove bitterness from onions: simple ways
Onions are a very healthy product, but not everyone likes its specific taste with a pronounced bitterness.
But it is advisable to use it, especially in the cold season, because it is a valuable source of vitamins. What needs to be done to remove bitterness from onions while preserving their benefits?
How to remove the bitterness of onions
Pouring boiling water over the onion is the most common way of housewives in the fight against its bitterness. But, firstly, boiling water will destroy some of the nutrients, and secondly, the onion will acquire a specific taste, which not everyone will like either.
If this method does not work for you, then try the following:
frying: chopped onions are fried in a little oil;
soaking in salt: add 1 tbsp for a liter of cold water. l. salt and place the chopped onion there for about 20 minutes;
marinade: for a glass of 3% vinegar, take ½ tbsp. l. sugar, salt and sunflower oil. Onion rings are poured with this mixture and kept for about half an hour;
cooking: the simplest method, but such an onion loses its original taste and acquires an unpleasantly soft consistency – this method is usually used when preparing first courses and most often the boiled onion is simply thrown away, and the broth acquires a pleasant aroma.
These are some simple ways that will not take much time.
How to remove bitterness from onions for salad
In this case, it is desirable to preserve the structure of the onion, so neither boiling nor frying is suitable for spring and summer salads. In winter salads, soft onions can still fit, and usually their composition successfully hides it.
Pickled onions may be suitable for fresh salads, but not everyone loves the taste and smell of vinegar. How else can bitterness be removed? Here again salt can help us. The chopped onion can either be soaked in a weak brine and then rinsed, or you can simply cover the pieces with salt, stand for half an hour and then rinse them well in a colander with cold running water.
If you come across bitter green onion feathers, then you can fix the situation as follows:
- grind them (very finely);
- stir the resulting mixture until juice appears;
- melt the butter and pour the onion;
- stir and leave for 10 minutes;
- rinse under running water.
Then you can add greens to the salad.
