Drying, unlike other methods of preparation, allows you to preserve the aroma and all the taste properties. To do this simple procedure at home, you need to know how to dry mushrooms correctly. After all, it is necessary to adhere to a certain technology in order to preserve nutrients and extend the shelf life.
What types of mushrooms can be dried at home
Before starting the procedure, you need to sort out the entire crop. Only strong mushrooms without wormholes are suitable for drying. But not every species can be prepared in this way.
You can dry mushrooms of the tubular and marsupial family – these are white, Polish, boletus, boletus, chanterelle, boletus, oak and morels. Lamellar ones contain bitterness that remains after drying. Therefore honey mushrooms, mushrooms, oyster mushrooms, milk mushrooms and mushrooms are better to pickle.
How to dry mushrooms properly
There are a huge number of ways to dry at home, but they all imply the observance of some rules, namely:
- before the procedure, the mushrooms cannot be washed, it is enough to clean them of leaves and dirt or remove the peel;
- drying should start at low temperatures;
- it is advisable to cut large caps and legs into several parts into thin plates;
- during the procedure, it is necessary to maintain a high temperature and sufficient air circulation to prevent spoilage of the product.
Only by observing these rules can you keep dried mushrooms for a long time. You can dry them outdoors or in special dryers, in a microwave or oven, on a gas stove. Let’s take a look at some of these methods.
In sunny weather, mushrooms can be dried on an unglazed balcony or yard to provide adequate ventilation. The procedure takes a week. Mushrooms are strung on a thread and hung or laid on cardboard with their caps down.
When using an electric fireplace, the mushroom plates will dry unevenly. They must be mixed periodically and taken away dried.

How to dry mushrooms at home in a gas or electric oven? To do this, place the mushroom plates on a baking sheet lined with parchment paper. Initially, the temperature should be 45 degrees. After the mushrooms do not stick to the paper and dry out a little, increase to 70 degrees. Do not close the oven door tightly. It is advisable to dry it for two days in several approaches. The total time is 7-12 hours.
In a microwave oven, the mushrooms should be evenly placed in a flat dish. Dry for 20 minutes at 150 watts. After airing for XNUMX minutes, repeat the procedure. The process can consist of several cycles, depending on the thickness of the mushroom plates.
Home-dried mushrooms are ideal for first and second courses. But only by observing all the rules, you can get a quality product with a rich taste and smell.
