Preparation of ingredients
We will not separately talk about how to prepare vegetables for pickling in each recipe. We will dwell on this issue separately, since they are still the same.
- Remove the top leaves from the forks, as they may have dust and slight damage from insects. Cut out a stump from each fork. Shred cabbage in different ways. Can be straws or pieces, depending on the recipe. For grinding, use a knife, a shredder board or a special knife with two blades, as it suits you.
- We wash the carrots in cold water, remove the peel, rinse again and lay out on a napkin to dry. This vegetable is crushed either on a grater, or cut into small strips with a knife.
- If the recipe provides for black or allspice peas, bay leaf, then they must be washed in cold water and dried before adding to the pickle.
- If garlic is used in the recipe, then it is divided into cloves, the integumentary scales are cleaned, washed and chopped in accordance with the recommendations of the recipe.
Recipe 1 – in brine without vinegar per day
Filling with hot brine allows you to get salted cabbage quickly. In a day, the salting is ready. Not only white cabbage varieties are suitable for this recipe, but also red cabbage. According to the traditional method used by our ancestors, they cut the vegetable for pickling into pieces. When serving, you can add any greens, onions. As a rule, salads with cabbage are seasoned with vegetable oil.
What will be required:
- head of cabbage – 1 piece;
- carrots – 1 piece;
- black or allspice – 5-6 peas;
- lavrushka – 3-5 leaves;
- water – 1 liter;
- salt (not iodized) – 30 grams;
- granulated sugar – 15 grams.
Salting method
- We mix cabbage with carrots on the table or in a basin and mix well and crush.
- We spread the first layer in a dry sterile jar, add pepper and bay leaf. We tamp down the mass. If your hand doesn’t fit in the jar, you can use a masher. We fill the jar not to the very top, leave about 5 cm free, fill it with hot brine and pierce it to penetrate the brine to the very bottom.
- Pour salt and granulated sugar into boiling water, mix well. Bring to a boil again and fill the jars.
The bank does not need to be covered. It is placed on a pallet (the juice rises during salting and can overflow over the edge) in a warm place. You can take a sample after 24 hours. Store the jar in the refrigerator or basement.
Quick cabbage per day in cold brine:
Recipe 2 – with garlic per day
You can pickle cabbage with garlic. It turns out very tasty. You don’t have to stock up on special ingredients.
We manage:
- a kilogram of white cabbage;
- one carrot;
- 3 or 4 garlic cloves;
- one liter of water;
- half a glass of granulated sugar;
- two tablespoons of salt;
- a glass of table vinegar;
- water – 1 liter, it is not recommended to take tap water to prepare the brine, since it contains chlorine;
- table vinegar – 1 cup;
- vegetable oil – half a glass.
How to salt
For salting cabbage in a day, use a jar or pan. White cabbage is laid in layers in a container, then carrots and garlic. Pour the filled dish with boiling brine.
How to prepare the brine, now we will tell:
- Pour salt and sugar into boiling water, pour vegetable oil.
- When the water boils again, remove from the stove, add table vinegar.
Cabbage will be salted in the room for a day. Salted in this way, the cabbage is stored in the refrigerator.

- water – 1 liter;
- coarse salt – 70 grams;
- sugar – 100 grams;
- refined oil – 200 ml;
- table vinegar – 100 ml (if vinegar essence, then 2 tablespoons).
Put a pot of water on the fire and bring to a boil. Salt and sugar it. If it seems to you that salt is not enough, you can add to taste. But watch out, don’t overdo it! Then add the rest of the ingredients, except for the vinegar. Pour it in after removing the pan from the stove.
We use boiling brine for pouring. When the jar of vegetables has cooled, you can try. Fast and delicious cabbage is ready to eat not in a day, but in an hour.
