First, pick a good pineapple – ripe, it smells good, it has dry leaves that are easily pulled out of the middle.
You will need a sharp large knife and a little patience. Cut off the top with leaves – about a cm of pulp. Also cut off the opposite end. Place the pineapple upright and cut the peel in strips.
Cut the pineapple into quarters and cut out the core – it’s too thick to eat. Cut the remaining pulp into portions.
