Collect brushes carefully, otherwise the berries will burst easily. Wash them without removing them from the brushes, always under running water.

Viburnum jelly without cooking
In such a product, all healing substances are preserved as much as possible. To prepare a delicious preparation, you will need the same amount of sugar for each glass of pureed juice with pulp. The bones of the viburnum are hard and very bitter, so they will have to be removed. For this, the berries are rubbed. This process is quite labor intensive. But for the preparation of tasty and healthy jelly, it is not a pity to work hard.
You can crush with a wooden pusher, and wipe with an ordinary spoon. Vitamins are better preserved if it is made of wood.
Stir juice with sugar until dissolved. Pour the resulting jelly into clean, dry jars.
Store viburnum jelly in the cold, preferably in the refrigerator. It should be consumed within 3 months.
Viburnum jam-jelly
If there are no conditions for storing raw jelly, it is better to boil the berries with the addition of sugar.
According to the method of preparation, this blank is more likely a jam, but its consistency resembles jelly. A kilogram of berries will require 800 g of sugar. We put the prepared berries in a saucepan or basin and completely fill with water. To make them soft, cook viburnum for about 20 minutes. The fire doesn’t have to be big. We strain the berries.
We wipe the soft berries through a sieve or colander. It’s easier to do this before they’re cold.
Measure the level of the berry puree in the saucepan. This will be useful to us in the future. A wooden spoon with a long handle or just a clean wooden stick is good for this procedure. Make a mark on it, noting the level of the pureed berry.
Mix berry puree with broth. The mixture must be well strained. It is convenient to do this through gauze, which must be laid on a colander in 2 layers. Let the resulting liquid stand for at least 3 hours. Carefully drain it from the sediment. Stir in sugar until completely dissolved.
Filter the mixture again. Now it should be boiled down to the volume that the berry puree occupied. Pour the finished jelly hot into a dry, sterilized dish. Seal tightly and store in a cool place.
