What we do not cook only from them: salads, sauces, juice, preparations for the winter. What about a tomato for dessert?
We already found out once that tomatoes are actually not vegetables at all, but fruits. And fruit for dessert is a common thing, because mango or peach, watermelon or melon can easily replace the cake.
“Fruits are a part of many desserts, making baked goods sweeter, more flavorful and juicier with them,” explain experts at Mutti, a tomato-based company. “Desserts with tomatoes will surely surprise you with an unusual combination of flavors and will cheer you up: this fruit contains serotonin, which is responsible for positive emotions.”

Crispy nougat with tomato paste
For 6 servings you will need
3 tbsp. tablespoons of concentrated tomato paste; juice of 1 lemon; 1/3 cup each hazelnuts, almonds and walnuts; 1/4 cup each pine nuts and pistachios; 2 tbsp. tablespoons of white sesame oil, 1/2 cup sugar.
How to cook
First, dry the nuts in the oven. While they are fried, melt the sugar, lemon juice and a few tablespoons of water in a skillet. Simmer the caramel for 20 minutes over low heat. Chop half of the nuts. Add tomato paste and nuts to the caramel. Stir. Quickly pour the mixture onto the parchment, cover with a second sheet and roll out with a rolling pin into a thin layer. Let the nougat cool down. Serve with ice cream.
Cookies with tomato jam
Keep in mind: these are adults only cookies! It contains alcohol, so make sure you have no contraindications.
For 15 pieces you will need
80 grams of margarine, 1/2 cup sugar, a glass of flour, an egg, a bag of yeast, a pinch of salt. For jam: 20 cherry tomatoes, a glass of sugar, a teaspoon of grated ginger, half a glass of sambuca, a bag of vanilla sugar, zest of one lemon. For decoration: 2/3 cup chopped fondue.
How to cook
Beat the egg, margarine and sugar with a mixer. Pour flour, salt and yeast into the mixture. Mix well. Put the resulting dough on a film, wrap and leave in the refrigerator for 30 minutes. Roll out the dough in a thin layer of 1 cm. Cut out small circles with a glass, and in half of them make round cuts of a smaller diameter. Bake the cookies in the oven for 5 minutes at 180 °.
To prepare the jam: combine all the ingredients in a saucepan and cook for 25 minutes over medium heat, then whisk the resulting mixture in a blender and cool.
We collect the cookies: put jam on the cookie circle, cover with cookies with a cutout. Sprinkle chopped nuts on top – done!
Bavarian cream with tomato topping
On the 4 portion you will need: 1 tbsp. a spoonful of concentrated tomato paste, 1 1/3 cups of milk, one and a half cups of whipping cream, 5 yolks, vanilla pod, 5 tbsp. tablespoons of sugar, 5 teaspoons of gelatin, half a glass of chopped walnuts, a little dark chocolate, grated.
How to cook
Cover the gelatin with cold water and let sit for 20 minutes. In the meantime, whisk the yolks and sugar and bring the milk to a boil with the vanilla pod in it. Add the yolk mixture to the milk and cook for 10 minutes until creamy. Pass the cream through a sieve. Add gelatin and tomato paste to the cream, cool. Whisk the cream into a thick foam and gently pour into the cream. Pour the dessert into 4 glasses and refrigerate for 4 hours. Top with tomato paste, sprinkle with chopped walnuts and dark chocolate.
Rice cake with tomato jam
You will need
For the cake: a liter of milk, one and a half cups of rice, one and a half cups of sugar, 5 eggs, zest of 1 lemon, a glass of chopped almonds. For jam: 20 cherry tomatoes, a glass of sugar, 2 bags of vanilla sugar, 3 tbsp. l. liqueur, a teaspoon of grated ginger.
How to cook
First, make the jam: mix all the ingredients, cook for 25 minutes and send the mixture to the refrigerator. Now let’s get down to the pie. Fill the rice with milk, add sugar and cook for 20 minutes. Cool the cooked rice, add eggs, zest and almonds to it. Put the resulting mass in a mold and bake for 45 minutes in an oven preheated to 160 degrees. Cool the finished pie, pour with jam – it’s done!
For 30 pieces you will need: 3,5 cups flour, 180 grams of butter, 4 yolks, 4 tbsp. spoons of warm milk, a bag of vanilla sugar, a pinch of salt, 400 grams of dark chocolate.
How to cook
Cook jam in the same way as in the previous recipe. Making the dough: mix flour and chilled butter in a food processor. You should get an oil crumb. Then add the yolks, milk, vanillin and salt. Quickly knead the elastic soft dough. We wrap it in foil and put it in the refrigerator for 1 hour. While the dough is cooling, we make chocolate discs: melt the chocolate, pour it onto baking parchment, let it cool slightly and cut out the required number of discs with a cookie cutter. Then let it cool completely. Roll out the dough 1 cm thick, in the same shape that was used for the discs, cut out the cookies and bake in the oven for 20 minutes at a temperature of 180 degrees. Now we put together the dessert: spread the cookies with jam, put the chocolate disk, spread another layer of jam and cover with the second half of the cookies.
