How to make sugar cake decorations

Sugar decorations are used to bake cakes, pastries, and buns. Such variations give a certain beauty and solemnity to the appearance of the baked confectionery. Some craftswomen make real works of art on the surfaces of the cakes. You can go a simpler way: just write sugar wishes for the birthday man. But how do you make your own sugar garnish?

Most craftswomen use sugar decoration with the additional use of a pastry syringe. For the presented tool, it is necessary to prepare a viscous mixture, where a classic cream recipe is used. Here you will need 250 g of powdered sugar and half a teaspoon of lemon juice for one egg white.

The cream is prepared in the following way:

  1. The whites are easy to beat with a fork. Gradually, powdered sugar is added to the protein in equal portions.
  2. The hostess’s task is to beat the protein with powder each time until a homogeneous consistency.
  3. Having received a viscous and slightly thick mixture, lemon juice is added to the composition.

Next, you need to divide the resulting mixture into several parts, to which food colors of different shades are added. The containers with the finished mixture are covered with cling film. The desired color is placed in a pastry syringe and used to decorate the cake.

Sugar cake decorations: mastic

Powdered sugar decoration can be made of a denser consistency. Such a mixture is called mastic – a semblance of edible plasticine, with which the entire cake is lined, and figures are made from it.

The mastic is prepared in the following sequence:

  1. 5 teaspoons of gelatin are soaked in water in the amount of 3 tablespoons for half an hour.
  2. After swelling, 125 ml of previously melted honey is added to the gelatin. The entire consistency is thoroughly mixed and placed in a bowl in a water bath.
  3. The mixture is heated for 10 minutes so that all the gelatin is finally dissolved.
  4. Pour about 700 g of icing sugar into a bowl. Make a depression in it and pour the honey mixture in a thin stream, mixing everything thoroughly in parallel.
  5. Begin kneading the mastic like a baking dough – first in a bowl, then go to the board.

After mixing the mastic, put it in a bag and soak it for half an hour. After that, the sugar dough can be used to cover the entire cake. To make the figurines, the mastic should be kept for XNUMX hours – it will become similar to plasticine and will not melt when placed on the cake.
