How to make perfect cheesecakes: 7 secrets

One of the best options for a healthy breakfast is cottage cheese pancakes. True, not many undertake to cook them: the cheesecakes either stick or fall apart in the pan. In general, sheer frustration. We’ve put together some tips for you on how to make the perfect cheesecakes – healthy, tender and tasty.

1. The most important thing is to choose correct cottage cheese… Even if you are on a diet, take cottage cheese with a fat content of at least 5 percent. A low-fat product will not benefit the body. The curd should be as homogeneous as possible. If it is grainy, then it is better to rub it through cheesecloth or a sieve or beat with a blender. In addition, the curd should not be too wet. To get rid of excess serum, squeeze it through cheesecloth.

2. Another important detail is to choose the right dough consistency… If it is too liquid, the pancakes will fall apart and absorb too much oil from the pan. However, all this can be avoided by baking them in the oven. And if the dough is too thick, the cheesecakes will turn out to be dense and tough – no tenderness.

The dough should be such that balls can be formed from it, but at the same time it sticks a little to your hands. To stop sticking, the dough can be kept in the refrigerator for a while. Alternatively, hands can simply be moistened with water.

3. If you do cheesecakes with semolina, then the dough must be allowed to rest for 15-20 minutes, so that the semolina absorbs moisture and swells.

4. Sugar is evil… If there is too much of it, then the syrniki will burn – the sugar starts to burn first. It can be replaced with any sweetener or even banana puree, but the easiest way is to simply follow the recipe and put no more than 50 grams per pound of cottage cheese.

5. Breading – good… If you cook cheese cakes in a pan, then it is better to roll them in flour or semolina so that they do not burn. If you decide to bake syrniki in the oven, you can skip this cooking stage.

6. Make sure the pan warmed up properly… If you put the cheesecakes in butter that is not hot enough, they, firstly, will stick, and secondly, they will absorb a lot of oil and turn out to be unpleasantly greasy.

7. It is better to serve cheesecakes not hotly, with the heat, but slightly cooled or even warm. And the curd casserole should be cooled completely – then their taste is revealed most fully.

Recipe 1. Classic cheese cakes

Ingredients: 500 g of cottage cheese, 2 tbsp. l. sugar, 1 tsp. vanilla sugar, egg, 2 tbsp. l. flour for dough and a little more flour for breading, 5 tbsp. l. vegetable oil for frying. You can take rice flour – the cheese cakes will be even more airy on it.

Cooking: Grind the curd thoroughly (or beat in a blender) with sugar and vanilla sugar. Lightly beat the egg with a fork, add to the cottage cheese, mix. Add sifted flour (with a pinch of salt), mix thoroughly. Pinch off small pieces from the finished dough, roll into balls, flatten slightly, roll in flour. Alternatively, you can roll the dough into a sausage and cut into portions. Fry cheesecakes in a pan until golden brown, serve with jam, honey or sour cream.

Recipe 2. Cheesecakes with semolina

Ingredients: 500 g of cottage cheese, 2 eggs, 4 tbsp. l. semolina, 2 tbsp. l. sugar, vanillin.

Cooking: Grind cottage cheese with sugar, drive in an egg, mix. Add semolina and vanillin, mix thoroughly again and leave the dough to “rest” for 20 minutes. We form cheese cakes – with our hands or with a tablespoon – breaded in flour and fry in a skillet under the lid until golden brown.

Recipe 3. Cheesecakes with potatoes

Ingredients: 300 g cottage cheese, 300 g potatoes, egg, 1 tbsp. l. flour, a pinch of salt.

Cooking: boil potatoes in their uniforms, cool, peel and knead into a homogeneous puree without lumps. Knead the cottage cheese with mashed potatoes, add the egg, flour and salt, mix thoroughly and leave in the refrigerator for half an hour. We form cheese cakes, put on a baking sheet oiled or covered with parchment, bake in an oven preheated to 180 degrees for about 30 minutes.

Recipe 4. PP-syrniki

Ingredients: 500 g of crumbly cottage cheese, 200 g of pasty, 1 tbsp. l. rice flour, 2 tbsp. l. brown sugar.

Cooking: all ingredients are mixed with a mixer. Spoon the resulting mass, roll in rice flour and spread on a baking sheet using a cookie cutter. We bake in the oven at 180 degrees for about 20 minutes.

Recipe 5. Cheesecakes with banana

Ingredients: 500 g of cottage cheese, 2 eggs, a large very ripe banana, 2 tbsp. l. flour, 2 tbsp. l. decoys.

Cooking: grind cottage cheese with eggs, flour and semolina. Mash the banana in mashed potatoes, add to the curd mass, mix thoroughly. Can be baked in the oven or fried in a pan.
