How to make pea soup

Pea soup is a dish that is part of the national cuisine of many countries. Great Britain, Germany, the countries of Northern and Eastern Europe, Russia – in each of these countries, pea soup was cooked in ancient times and until the advent of potatoes on the continent, peas were one of the main products of common people.

 

The popularity of peas is not accidental, in terms of its nutritional properties it can replace meat, but at the same time, it is more easily digested by the body, almost completely absorbed.

Peas contain a large amount of vitamins and amino acids that normalize intestinal activity.

 

Peas lend themselves well to storage, for this they are dried or canned. The basis for the pea soup is dry peas. Hulling varieties are best suited for this.

In order for the peas to boil well, it is recommended to soak them for several hours before cooking, in which case the peas boil time can range from 15 minutes to 1,5 hours. Each housewife sets the time for boiling the peas herself, depending on the degree of dryness of the pea grains and the taste preferences of family members.

Pea soup is a hearty dish that is most often prepared using a wide variety of smoked meats.

Pea soup with smoked pork ribs

Ingredients:

 
  • Smoked ribs – 500 gr.
  • Bacon – 100 gr.
  • Peas – 500 gr.
  • Luk – 1 No.
  • Carrots – 1 pieces.
  • Potatoes – 2-3 pcs.
  • Garlic – 2 cloves
  • Salt – to taste
  • Pepper to taste
  • Fresh greens – a few twigs
  • Water – 3 l.

Before preparing the soup, you need to pour dry peas for at least 3-4 hours, it is best to do this overnight, then the peas will be soft.

Boil pork ribs, the cooking time can be about an hour or a little more, you need to ensure that the meat itself begins to separate from the bones.

Cooking vegetables. Finely chop the onion, rub the carrots on a coarse grater, peel the potatoes and cut them into medium cubes.

 

When the meat is ready, add peas to it and cook for at least 30 minutes, if you like heavily boiled peas, then cook longer.

Add potatoes and cook for another 15-20 minutes.

Fry onions and carrots in a pan.

 

Add them to the soup. Salt and pepper, add finely chopped bacon and cook for another 10 minutes. After that, fill the soup with finely chopped herbs and let it brew for about half an hour.

It is better to grind the meat before serving the soup.

Light pea soup

 

Ingredients:

  • Peas – 200 gr.
  • Beef broth – 3 l.
  • Potatoes – 2-3 pcs.
  • Luk – 1 No.
  • Carrots – 1 pieces.
  • Vegetable oil – for frying
  • Salt – to taste
  • Pepper to taste
  • Dill – a few twigs

Boil the pre-soaked peas. The cooking time ranges from 30 minutes to an hour, depending on your taste preferences.

Fry finely chopped onion until transparent, add carrots grated on a coarse grater to it.

 

Put potatoes and peas in a boiling broth, cook for 15 minutes, salt, put pepper and add fried onions and carrots.

Cook for another 10 minutes. When the soup is ready, remove it from the heat, add finely chopped dill and let it brew for half an hour.

Pea Soup with Pumpkin

In this soup, pumpkin replaces carrots and gives it a special flavor.

Ingredients:

  • Peas – 200 gr.
  • Smoked products – 100 gr.
  • Potatoes – 2-3 pcs.
  • Luk – 1 No.
  • Pumpkin – 100 gr.
  • Bay leaf – 2 pcs.
  • Salt – to taste
  • Pepper to taste
  • Spices – to taste
  • Water – 3 l.

Soak the peas overnight.

Boil water in a saucepan, add peas and coarsely chopped potatoes to it.

Chop the onion finely, chop the pumpkin into small pieces. Finely chop the smoked meats. Put everything in a pan and fry, adding just a little oil.

Add fried vegetables and smoked meats to the soup, add bay leaves, salt and spices to them.

Take the boiled potatoes out of the soup, knead them with a fork and put them back in the pot. Cook for another 20 minutes to soften the peas.

The result is a thick and aromatic soup that should only be served hot.

Pea puree soup

Ingredients:

  • Peas – 250 gr.
  • Smoked products – 150-200 gr.
  • Garlic – 6 cloves
  • Dill – a few twigs
  • Salt – to taste
  • Pepper to taste
  • Water – 250 ml.

Boil the presoaked peas. The longer the cooking time, the better, since we need to grind the finished peas in a blender along with the broth.

Add finely chopped garlic to the puree and beat again with a blender.

Finely chop the smoked meats and put in the soup, add salt and pepper and chopped dill. Put the pan on the fire and cook for another 10 minutes.

Lean Pea Soup

Ingredients:

  • Peas – 1 tbsp.
  • Carrots – 2 pieces.
  • Potatoes – 2 pcs.
  • Luk – 1 No.
  • Celery root – ½ pc.
  • Bay leaf – 2 pcs.
  • Salt – to taste
  • Pepper to taste
  • Olive oil – 1 Art. l
  • Water – 1,5 l.

Pre-soak peas for several hours. Cook the soaked peas for about half an hour or a little more, until they become soft.

Peel and cut the potatoes into medium cubes, send to the peas and cook for another 15 minutes.

Fry onions, carrots and celery in a frying pan. You can add a little and massage until half cooked.

Add vegetables to the soup, salt and pepper, cook for another 15 minutes until fully cooked.

It is better to let the finished soup steep a little.
