How to make mayonnaise?
Mayonnaise is an oil-in-water emulsion. It is enough to produce it egg yolk, oil, mustard, lemon juice, possibly vinegar and spices. The emulsifier here is the yolk, which makes it possible to create a homogeneous, tasty emulsion. How to prepare this delicacy yourself? Here is the basic recipe.
Ingredients: – 2 yolks – a glass of rapeseed oil (preferably unrefined) – 4 teaspoons of lemon juice – 1 teaspoon of mustard – salt and pepper to taste
Transfer the yolks to a bowl. Add mustard and lemon juice and combine well. While stirring slowly, add the oil in a small stream. Stir until you get a smooth, creamy consistency. Season with salt and pepper.
It can stay in the refrigerator for up to 5 days.

It takes so little to enjoy the taste of mayonnaise, and so many additives can be found in commercial mayonnaise. In addition to the above-mentioned basic ingredients, we also find sugar, xanthan gum, guar gum, modified starch, lactic acid, citric acid, potassium sorbate, sodium benzoate, flavors and additives E200 – sorbic acid, E338 – phosphoric acid, E385 – calcium-disodium salt EDTA. Such mayonnaise will stay in the refrigerator for six months or even longer. Hence the high content in the diet omega 6 has been linked in many studies with an increased risk of cardiovascular disease. For the sake of improving health, it makes no sense to buy omega 3: 6 mayonnaise (nor omega 3: 6: 9).
How to make vegetarian mayonnaise?
So why not lean towards plants and choose a soy-based vegetarian? It is for sure a good alternative for people who need to be careful about cholesterol levels in the diet as this mayonnaise will not contain it at all. Unfortunately, the exclusion of the yolk, which, as we have already established, is an emulsifier, requires the introduction of other compounds that will replace it. So often such mayonnaise, especially if we buy ready-made, becomes a source of a number of compounds that we would not like to eat, such as guar gum, dextrose, sugar or preservatives. Ingredients: – 8-10 tablespoons of rapeseed oil (or other vegetable oil, preferably cold pressed) – ½ cup of soy milk (or almond milk) – ½ teaspoon of salt – ½ teaspoon of mustard – 3 teaspoons of lemon juice or apple cider vinegar – a pinch of pepper
Blend soy milk, lemon juice, mustard, salt and pepper until smooth. Slowly add the oil, stirring constantly, until a smooth consistency is achieved.
