How to make mayonnaise at home
 

Mayonnaise is a popular and versatile sauce. To avoid stabilizers and emulsifiers in the composition, prepare mayonnaise yourself at home.

To do this, take:

  • 4 egg yolks,
  • a tablespoon of mustard
  • 2 teaspoons of sugar
  • half a teaspoon of salt,
  • 2 tablespoons of vinegar
  • 500 ml of vegetable oil.

Mix yolks, salt, sugar and mustard, beat, gradually add 1 spoonful of vinegar. Without stopping whisking, pour in a thin stream of oil – half the volume, add vinegar again and add oil again. Whisk until you are satisfied with the color and consistency. Cover the finished sauce with a lid and refrigerate.

Secrets of a successful mayonnaise:

– All ingredients should be at room temperature.

 

– Use a low whipping speed.

– Replace vinegar with lemon juice – mayonnaise becomes even healthier.

– Replace olive oil with sunflower oil – mayonnaise will not taste bitter.

– Dilute thick sauce with warm water and beat.
