How to make “homemade Baileys” for 200 rubles: I share the recipe for “Lawyer” from the 90s with egg and milk

My wife loves Baileys (Baileys). No, better not so that you understand exactly the extent of the problem. My wife and her girlfriends love Baileys! Well, of course, how not to love him? Fashionable luxury alcohol.

Not too strong, sweet and Irish cream flavored. For a friendly chatty evening, this company drinks a bottle, or even a couple. And now the crux of the problem: I am the sponsor of this holiday.

Why I decided to make alcohol myself

No, we are not poor. I have a beloved wife and I was not going to save on her. But the voracity of her friends decently hits the family budget. Before the crisis, I did not attach much importance to this, but now I am trying to optimize extra expenses.

In this regard, I remembered the liqueur recipe that we used to make ourselves. This recipe is from the 90s. Then neither Baileys (Baileys), nor Irish cream in Russia even smelled yet. But there was a need to win women’s hearts. And what a need!

And my friends and I ourselves prepared the liquor “Lawyer”, as it was then called. I don’t remember where the recipe came from. But his record in my bachelor cookbook has been preserved.

What ingredients are needed for liquor

We don’t need anything supernatural. I prepare a drink from the most ordinary products, but the result is very close to the taste of a luxury liquor.

We need eggs. Not whole, just yolks. For me, this is the most problematic part: how to separate these “bad” yolks? Just in case, I separate each over a small mug and only then pour it into a common container.

By the way, scrambled eggs are a faithful companion of this liquor. Well, I don’t throw out the squirrels, I fry them and eat them.

You will also need a small bag of vanilla. Worth a penny, and the aroma of the entire kitchen.

On the eve of the next gatherings of the Women’s Council from the store, I returned without the cherished call in the package. When asked by his wife, he said not to worry, she was in for a surprise. He kicked everyone out of the kitchen and started cooking. You will also need sugar, warm milk and alcohol.

The fact that alcohol is now difficult to find on the free market, just became the reason for forgetting my recipe.

In the 90s, you could buy as much as you wanted. Now you need to be smart to get the bottle. I will not lay down my production channels. I can only say: who seeks – he will always find. And now attention!

Depending on who you cook for, the proportions of the ingredients are different. The female version is lighter. Male is stronger. I have known my wife’s friends for a long time and well. Therefore, I decided to prepare a male version.

The cost of ingredients for one batch does not exceed 200 rubles on average.

The cooking process

We boil the milk and let it cool decently so that it is warm. But not hot, otherwise the egg will curdle. If foams appear, they must be removed. In general, since childhood, I can’t stand foam. But we boil, so it is necessary for the recipe.

Whisk egg yolks, sugar and vanilla until white. Previously, the whisk had to be shaken for a long time, as much as the hand was numb. And now the mixer is there: one minute and you’re done. The cooking process has been greatly accelerated.

Add milk. Remember, yeah, what’s not hot? The moment is responsible, and you can ruin everything at this stage. I cool for about 10 minutes from the moment of boiling under ice water, although it is better to take it to the balcony if the climate is right.

Beat the workpiece continuously and add alcohol in a thin stream. Be sure to beat, otherwise the capricious egg runs the risk of curling up again. We mix everything well. Strain through a fine sieve. It happens that the egg is not completely loosened, then the pieces of protein will remain on the sieve and will not fall into the liquor.

What result did I get

The cherished bottle was waiting for the mademoiselles in the refrigerator and aroused considerable interest of his wife. Liquor should be served cold, you can put a couple of ice cubes in each glass.

In general, as far as I know, liquor is poured into glasses, but in the case of these guests there were glasses. And a decent volume of glasses.

The liquor worked! I am not a fan of sweet alcohol. But even I like this taste. No worse than imported counterparts. The aroma is very creamy, although there is no cream at all. The wife’s friends were delighted. The bottle was emptied instantly.

I have only one regret now. Before giving my wife my Lawyer, it should have been poured into an empty bottle from Baileys. I’m sure no one would notice the change. What do you think? Was it worth it?
