The curds and curds bought in the store are very tasty. However, they also have a drawback – a huge amount of additives that are not very healthy for health. Make a curd mass at home and supplement it with natural ingredients such as fruits, homemade jams, nuts, herbs or spices. Hearty or sweet mass is a great addition to breakfast or dinner for the whole family.

How to make curd mass? Recipe

To make the curd mass truly tasty and healthy, cook the curd yourself. Any dishes can be made on its basis. The more fatty milk you use, the softer the curd will be. However, for those who prefer dietary meals, it is better to take a leaner product.

You will need: – 3 liters of milk; – 200 g sour cream. Pour milk into an enamel pan, add sour cream. Stir everything, cover and heat to ferment. The process will take 8-10 hours. When the clear whey begins to separate from the milk mixture, it can be considered complete.

Transfer the saucepan to the stove and heat the mixture over low heat until the curd mass separates from the whey. If you are afraid that the curd will burn, cook it in a water bath. Do not stir the contents of the pot while cooking.

Cover a colander with gauze and pour into the curd mixture. Let the whey drain, then tie the curd in cheesecloth and hang it to strain for 5-6 hours. At the end of the process, unfold the cheesecloth – tender homemade cottage cheese is ready.

Sweet mass with dried fruits

A very healthy breakfast product is a delicate curd mass with raisins, prunes and dried apricots. You can mix it up with dried fruit, or use just one of them.

You will need: – 200 g of ready-made homemade cottage cheese; – 0,75 cups thick sour cream; – 0,5 cups of chopped dried fruits; – 1 tablespoon of sugar; – 2 teaspoons of vanilla sugar.

Rinse seedless dried fruits and soak in boiling water for half an hour. Remove them, dry and cut into small pieces. Put the cottage cheese in a deep bowl, add sour cream, sugar, vanilla sugar and vanillin. Rub everything thoroughly with a wooden spoon. If you like a more homogeneous mass, beat it with a mixer.

Prefer a fatty product? Add a spoonful of good butter to the curd mass

Pour the chopped dried fruits into the curd mass and mix well. Serve in small bowls or plates. Serve toasted toast or fresh baguette separately.

Snack curd mass with herbs

Try another version of the curd mass. A salted herbal mixture is perfect for breakfast or a pre-main meal snack.

You will need: – 200 g of homemade cottage cheese; – 0,5 cups of sour cream; – 1 tablespoon of butter; – 2 tablespoons of chopped fresh herbs (dill, parsley, celery, basil); – salt; – freshly ground black pepper.

Instead of a mixture of herbs, you can use finely chopped green onions or very thinly chopped bell peppers.

Rinse the greens, dry and chop very finely. Pound cottage cheese, sour cream, butter, salt and pepper into a homogeneous mass. Pour the chopped herbs into the mixture, mix thoroughly and serve. The snack curd mass can be spread on toast or put in tartlets.
