How to make bean soup

Beans are native to South America. It is on this continent that beans of a wide variety of shapes and colors can be found.

 

Beans can be called an almost ideal product, since they contain a large amount of vegetable proteins that completely replace meat and, unlike animal proteins, vegetable proteins are better absorbed by the body.

Beans are the leader in the content of aluminum, potassium, calcium, boron, magnesium and copper. It contains iron, all the B vitamins, vitamin C, K, E.

 

Beans have an amazing property to retain all the nutrients, despite the heat treatment. Even canned beans contain a large amount of nutrients.

A wide variety of dishes are prepared from beans: soups, snacks, side dishes, stews. In this article, we will focus specifically on bean soups.

For soups, you can use canned beans, green beans, or raw beans. Raw beans need to be soaked for 8 hours so that they become softer and minimize the cooking time, as well as oligosaccharides that are not digested in the human body and impede the digestion process, dissolve in the water.

Healing chicken soup with beans

Everyone knows that chicken broth raises your feet during illness. And already if you add beans to it, which are rich in various microelements, then it is difficult to find a more tasty and healthy dish.

 

Ingredients:

  • Water – 3 liters
  • Chicken – 1 pc.
  • Dry white beans – 150 gr.
  • Carrots – 2-3 pcs.
  • Luk – 1 No.
  • Celery – 1 root
  • Sage – to taste
  • Garlic – 1 clove
  • Vegetable oil
  • Salt – to taste
  • Sugar to taste

Soak the beans for at least 6 hours. Before cooking, change the water and cook for 30 minutes with sage leaf and garlic.

Put the chicken in a pot of water, after boiling, put the onion and 2 celery stalks.

 

Carrot cut into slices.

When the broth is ready, strain it, pour into a clean saucepan, add the boiled beans and carrots and cook.

Separate the chicken from the bones, put it in the soup just before it is ready, season with chopped herbs, add salt and spices to taste.

 

Serve hot and fresh.

Mushroom soup with beans

Ingredients:

 
  • Dried porcini mushrooms – 1 handful
  • Fresh mushrooms – 600 gr.
  • White beans – 100 gr.
  • Garlic – 2 cloves
  • Red onion – 1 pc.
  • Vegetable broth – 1 liter
  • Parsley – 1/2 bunch
  • Mascarpone cheese – 1 tbsp l.
  • Lemon – 1 pcs.
  • Salt – to taste
  • Pepper to taste

Soak the beans for 6 hours. Boil. Pour boiling water over porcini mushrooms.

Pour oil into a saucepan with a thick bottom, heat it up and add fresh mushrooms, fry for a minute, stirring continuously. Add finely chopped onion and aromatic spices to them. When the mushrooms begin to juice, add the porcini mushrooms to them: half chopped, half whole.

Strain the liquid in which the porcini mushrooms were soaked and add to the saucepan. Cook for 20 minutes.

 

Then add the beans and cook for another 20 minutes. Then beat everything with a blender and add mascarpone cheese.

Delicious, aromatic and nutritious soup is ready. You can serve it with wheat croutons. Bon Appetit!!!

Bean soup for a quick hand

If you have boiled or canned beans, this soup shouldn’t take long to make.

Ingredients:

  • Finished beans – 5 tbsp l.
  • Ready rice – 2 tbsp. l.
  • Carrots – 1 pieces.
  • Vegetable broth – 300 ml.
  • Salt – to taste
  • Pepper to taste
  • Chili sauce – to taste

Add ready-made beans and beans cut into slices to the hot broth. Add salt, pepper, chili sauce. Add rice before being ready.

Just a few minutes and a delicious, nutritious soup is ready.

Minestrone

Classic Italian soup is impossible to imagine without beans. There are a lot of recipes for making minestrone. Here is one of them.

Ingredients:

  • Green beans – 50 gr.
  • Luk – 1 No.
  • Carrots – 1 pieces.
  • Potatoes – 1 pcs.
  • Tomato – 1 pcs.
  • Green peas – 50 gr.
  • Basil or parsley – a few sprigs
  • Garlic – 1 clove
  • Vegetable broth – 850 ml.
  • Vegetable oil – for frying
  • Salt – to taste
  • Pepper to taste

Chop the onion and garlic finely. Fry the onion and garlic in a heavy-bottomed saucepan.

Scald the tomato with boiling water, remove the skin and cut into small pieces.

Peel the carrots and potatoes and cut into small cubes.

Put the chopped vegetables in a saucepan with onions, pour over with vegetable broth, cook for 6-7 minutes, after the broth boils.

Add green beans and peas and cook for another 5 minutes.

Serve the soup garnished with finely chopped parsley or basil. The classic minestrone recipe assumes the presence of a wheat crouton at the bottom of the plate.

Bean soup with smoked meats

Ingredients:

  • Beans – 3 handfuls
  • Water – 2 liters
  • Lentils – 1 handful
  • Carrots – 1 pieces.
  • Luk – 1 No.
  • Celery – 2 stalks
  • Potatoes – 2 pcs.
  • Finished brisket or bacon – 150 gr.
  • Olive oil – for frying
  • Salt – to taste
  • Pepper to taste

Soak beans and lentils for 6 hours. Cut the smoked meats into cubes. Chop carrots and celery. Finely chop the onion.

Fry the brisket a little in vegetable oil, add chopped vegetables to it. Fry for a couple of minutes.

Put beans and lentils in boiling water. After they start to boil, add the sauteed vegetables. Last but not least, add potatoes, salt, spices.

The longer you cook this soup, the tastier it will be. After the soup is ready, beat it with a blender until puree.
