How to make a lean omelet

For those who are fasting or for some other reason decided to give up eggs, it is difficult to readjust to breakfasts without the usual scrambled eggs or omelet. But they can be prepared quite worthy replacement, it will only be enough to use tofu cheese instead of eggs.

Ingredients: 

  • Tofu – 300 g.
  • Garlic – 2 cloves 
  • Tomatoes – 100 g
  • Soy sauce – 2 tablespoons
  • Zira – 1/2 tsp
  • Coriander – 1/2 tsp
  • Turmeric – 1/2 tsp
  • Green onions or cilantro to taste
  • Salt, black pepper – to taste

Preparation: 

1. Place a skillet over medium heat and roast coriander and cumin on it until a pleasant aroma appears. 

2. Grind the spices in a mortar. Pour vegetable oil into the pan, add finely chopped garlic and the white part of green onions. Fry, stirring occasionally, until the vegetables soften. 

 

3. Add the crumbled tofu and cook for another 2-3 minutes, stirring and crushing the larger pieces of tofu with a spatula.

4. Add the chopped tomatoes, soy sauce, spices and turmeric to the skillet. Mix well. Cook until most of the moisture has evaporated.

5. Then add finely chopped green onions, stir and remove from heat. 

6. Before serving, season the tofu eggs with salt and black pepper and garnish with cilantro.
