Surprisingly, in cooking, the principle often works: everything ingenious is simple… Simple ingredients, minimum time, no cooking, and few can resist a serving of Greek salad. Beautiful, juicy, fragrant with impossible aromas, Greek salad, which in Greece itself is called peasant, has long become one of the favorite dishes on our tables. Of course, it is more correct to cook it from summer seasonal vegetables, ripe tomatoes with strong pulp, juicy peppers and tender cucumbers. And the Greek blue onion will adequately replace the Crimean or red salad, it is no less fragrant and sweet. We choose the freshest vegetables, extra virgin olive oil, the cheese should ideally be Feta, but feta cheese has proven itself well, especially if it is not too salty.
Greek classic salad
Ingredients:
- Sweet red pepper – to taste
- Tomato – 3 pcs.
- Cucumber (gherkins can be used) – 4 pcs.
- Purple onion – 1 pc.
- Feta cheese – 200 gr.
- Olives (pitted) – 200 gr.
- Dry oregano – pinch
- Olive oil – 50 gr.
- Ground black pepper – to taste
- Salad, dill – to taste
- Salt – to taste
Cut tomatoes into large pieces, cucumbers, onions and peppers into thin rings, feta into beautiful cubes, olives can be left whole or cut into slices. Mix vegetables, season with olive oil, add feta and olives on top, sprinkle with oregano and pepper. If the cheese is salty enough, you may not additionally salt, if you need salt, add it at the very end and serve instantly.
Greek salad with cherry tomatoes
Ingredients:
- Cherry tomatoes – 12 pcs.
- Iceberg salad – to taste
- Bulgarian pepper – 1 pc.
- Cucumber – 2 pcs.
- Pitted olives (for example, calamata) – 150 gr.
- Feta cheese – 150 gr.
- Olive oil – 40 gr.
- Lemon juice – 10 gr.
- Seasoning Italian herbs – 10 gr.
- Salt – optional
This recipe is for those who do not like onions too much. Cut the cucumbers and peppers into large cubes, divide the cherry into quarters, stir, drizzle with lemon juice and pour over with olive oil. Put feta, cut into cubes (or purchase ready-made, cut for salad), whole olives, on top – dry Italian herbs. If you are lucky enough to buy a Greek salad dressing, then this is the place for it.
Greek salad with herbs
Ingredients:
- Bulgarian pepper – 1 pc.
- Cucumber – 1 pcs.
- Tomatoes – 3 pieces.
- Red onion – 1 pc.
- Olive oil – 40 gr.
- Wine vinegar – 10 gr.
- Olives (pitted) – 150 gr.
- Cheese feta cheese or feta – 200 gr.
- Dried oregano – to taste
- Fresh mint – to taste
- Dill – to taste
- Salt – to taste
Cut the cucumber, pepper and onion into half rings, the tomatoes into large cubes, the olives lengthwise into two parts, finely chop the greens and mint. Mix vegetables, season with vinegar and olive oil, sprinkle with oregano, put feta on top, you can in large portions.
Any of the Greek salad options can be served on fresh lettuce leaves or wrapped in thin pita bread. Try replacing lemon juice or wine vinegar with rice vinegar sold in sushi shops, it tastes great!
