How to freeze sorrel for the winter
To get an unsalted piece and keep all the vitamins, you can use the freezing method. How to preserve sorrel in this way? Prepare the vegetable in the same way as described above: wash, dry, sort out and cut off unnecessary stems.
Then divide the entire amount of raw materials into portions. You can, of course, put the leaves in one bag and freeze, but in this case you will have to use them all at once. The fact is that during the secondary freezing, all the valuable qualities of sorrel are lost.
The next step is very simple:
– put each portion of sorrel in a separate plastic bag;
– roll up each bag quite tightly;
– put in the freezer.
It remains to get portions of sorrel as needed and use it to make soup, meat, sauce, fish. The beauty of this method is that the product is unsalted. Instead of bags, you can use plastic containers – also quite convenient, although it takes up more space in the freezer.
If the amount of frozen sorrel in the bag is still more than necessary, there is no need to wait until defrosting and puzzle over where to put the leftovers. You can simply cut the bag with a sharp knife, wrap the unwanted part in the bag again and quickly send it to storage.
