How and how much to cook obabki mushrooms before frying
Obabki can be boiled, dried, fried, marinated, frozen for the winter, salted, they still do not lose their beneficial properties. It is necessary to process mushrooms within a few hours after collection, because the pulp quickly deteriorates and darkens.
First, part of the leg is cut off, debris is removed from the sticky hat, then it is thoroughly washed under cold running water. It is not necessary to soak, you just need to fill them with water and wait for the boil. After the water is drained, dial a new one and boil the mushrooms again. Thus, all bacteria, toxic substances, insects, worms, invisible to the eye, will die. It takes a whole hour to cook the dough, removing the foam. As soon as the mushroom mass settles to the bottom of the pan, we can assume that the fruit bodies are cooked.
After such processing, mushrooms are prepared as an independent dish or served as a side dish for meat or stuffed with pies.

Instances collected in an environmentally friendly place can not be boiled for a long time after boiling. It is enough to clean them of debris and pour boiling water over them. Soaking mushrooms is also not recommended, as they have a porous texture that tends to absorb a lot of moisture. As a result, the finished dish will turn out watery and tasteless.
Meanwhile, many people prefer to pre-boil the mushrooms. This takes about 40 minutes. After pre-treatment, the obabki is poured with cold water, put on a strong fire and brought to a boil. Then the flame is reduced, and the mushrooms are boiled for a long time, removing the foam in the process.
