How to dry grapes in the sun

The grapes must be picked from the twigs, scattered on a wire rack in one layer and left in a sunny place. The drying process takes up to three weeks, depending on the weather. The finished product has a moisture percentage of no more than 20%.

The disadvantage of drying in the sun is that the grapes lose their original color and turn dark brown, the aroma also dulls.

How to dry grapes in the shade

Drying in the shade allows you to preserve the natural color of the grapes and a maximum of nutrients compared to drying in the sun.

The berries are laid out in the shade under awnings or hung in the attic without removing from the bunch. Drying lasts 4-5 months, grapes in bunches tolerate cold and even frost well if the attic is cold.

In addition to the traditional ones, there are also accelerated drying methods:

  • With alkali. The berries must be folded into a colander and blanched in a baking soda solution (1 heaped tablespoon in a 5-liter saucepan). Remove, pour over the grapes with cold water. Arrange in one layer to dry. Stir on the fourth day. After another 3-4 days, the raisins are ready.
  • In the oven. Drying, or drying, takes place at minimum heating (no more than 60 ° C) with the door ajar. The grapes are laid out on baking sheets, periodically changing their places so that they warm up evenly. The oven is periodically turned off, and the berries are stirred. In this temperature regime, the grapes are dried for two days. On the third day, the temperature is lowered to 40 ° C.

In three days, the berries are dried to the desired degree of moisture, and you can put them away for storage.

How to dry grapes in an electric dryer

Fully ripe and sweet grapes with dense pulp and skin are suitable for harvesting in an electric dryer.

Rinse the bunches with cold running water, separate the berries, trying not to deform them, so that the juice does not start to flow. Fill each tray of the dryer with grapes (one layer).

Depending on the juiciness of the berries, the drying process lasts 8-12 hours. During this time, you need to turn off the dryer 3 times, allowing the berries to cool down.

In order for the raisins to dry out at the same time and not to be overdried, you need to try to have berries of the same size on the tray.

Of course, fresh grapes are most useful, but knowing how to dry grapes, you can always stock up on healthy and tasty raisins for the winter.
