How to cut carrots into strips. Video
You’ve probably noticed that culinary recipes always indicate how to cut one or another vegetables and other ingredients. And this is no coincidence – not only the appearance of the dish, but also its taste depends on the cutting method. It is very important to properly cut vegetables and, in particular, carrots.
How carrots are cut when cooking different dishes
Carrots are added to many dishes – they are an ingredient in soups, salads, main courses, snacks and fillings. It can be put in soup as a whole, but more often for the preparation of first courses, this vegetable is rubbed on a coarse grater to make frying.
In the recipes for main courses and salads, you can find recommendations such as: “chop the carrots finely”, “chop the carrots into strips.” In the case when a little carrots are required, cutting will not bother you – using an ordinary knife, you can beautifully cut them in a couple of minutes. But there are dishes that require a lot of carrots to cook, which should be beautifully cut into long thin strips, for example, pilaf or Korean carrots. And this is where you need special knives and graters, they will greatly facilitate this difficult task, which is complicated by the fact that flexible straws must be cut along the plant fibers.
Carrot graters and knives
When preparing pilaf in Central Asia, many chefs use special knives. They are made of very tough, stiff steel and are sharply sharpened. The cutting method is as follows: peeled carrots are cut into thin longitudinal plates, and then several plates are cut diagonally, at a very acute angle to the longitudinal axis. But, of course, it requires a certain skill and a sufficient amount of time.
Koreans, who use thinly chopped carrots for cooking national dishes, have long begun to use a special grater with numerous knife-blades directed towards the movement of the carrots and allowing them to get long, beautiful straws of the same size with a square section at the exit.
A special grater allows you to get straws of the same thickness, so each piece has the same degree of roasting, and when cooking Korean carrots, it is evenly saturated with spices and sauce
This idea was implemented by many manufacturers of kitchen utensils – special graters-vegetable cutters of Chinese, Turkish, Italian and German production can be seen in any hardware store. It should be noted that for all their external similarity, these graters differ markedly in price and quality. In the event that you quite often use such a grater, it makes sense to purchase not the cheapest one. German graters have good reviews, the knives of which are made of high-strength alloys and sharpened at a special angle, which allows you to use such a convenient gadget for many years without losing the quality of cutting.
