How to butcher a rabbit: preparing portions

If the carcass was stored in the freezer, then it should be thawed before cutting. To speed up the process, you can put the rabbit in cool water and add a little vinegar – about two tablespoons. Cutting can be started only after complete defrosting. You will need a sharp knife, kitchen scissors or a hatchet and a board.

To cut a rabbit into portioned pieces, you need to do the work in stages.

The work is carried out in stages:

  1. First of all, you need to trim the fat, which can then be used during frying, and remove the insides. Store products are most often sold gutted.
  2. For the convenience of cutting, separate the back of the carcass by cutting the bones with kitchen scissors or a meat hatchet.
  3. Having cut off the legs, you need to evaluate their dimensions. If necessary, cut each hind leg at the joint into two pieces.
