How to cook stuffed cabbage

Classic stuffed cabbage rolls, those that were prepared by our grandmothers, and they were taught to make by their grandmothers, etc. are minced meat mixed with rice, wrapped in cabbage leaves. Classic cabbage rolls are stewed in sour cream sauce. Many people love this dish of our country and Russian cuisine. Moreover, at the moment, there are a lot of recipes for making stuffed cabbage rolls, vegetables, mushrooms are used as a filling for them, and since it takes a long time to cook meat cabbage rolls, that is, recipes for so-called “lazy” cabbage rolls, the preparation of which does not take much time.

 

In order to make the classic stuffed cabbage rolls even more interesting, you can not only “play” with the options of fillings, but also with the leaves in which it is wrapped. The classic recipe suggests using cabbage leaves for wrapping stuffed cabbage, but you can experiment with other varieties of cabbage, the leaves of which are more tender and soft, lettuce, spinach, beets. Actually, some dishes of Caucasian and Asian cuisine, for example, dolma, in which grape leaves are used, are analogous to stuffed cabbage.

When preparing cabbage rolls, you need to adhere to several rules, one of them: the rice that is added to the minced meat must be cooked until half cooked, it will get its own during the preparation of the cabbage rolls themselves, otherwise, they will simply be overcooked. The same applies to roasting vegetables.

 

Classic stuffed

Ingredients:

For stuffed cabbage, minced meat is best, made from equal parts beef and pork, but everyone can choose the proportions that best suit their taste.

  • Minced meat – 1 kg.
  • Rice – 1/2 cup
  • Cabbage – 1 head
  • Carrots – 2 pieces.
  • Luk – 2 No.
  • Tomato paste – 1/2 cup
  • Sour cream – 1 glass
  • Salt – to taste
  • Pepper to taste
  • Bay leaf – to taste
  • Greens – to taste
  • Garlic to taste

Disassemble the head of cabbage into leaves. Boil water in a saucepan and load cabbage leaves into it, this is done so that they become softer and it is easier to wrap the minced meat in them. Keep the leaves in boiling water for several minutes.

Chop the onion finely, grate the carrots on a coarse grater.

 

Add pre-washed rice, salt, pepper, squeezed garlic to the minced meat.

We make a cutlet from minced meat, put it on a cabbage leaf and wrap it.

Pour some vegetable oil at the bottom of the pan. Put onion and carrot mixture on the bottom. Next is a layer of stuffed cabbage. Then again onions and carrots. Fill everything with water, close the lid and simmer for 40 minutes over low heat.

 

Mix sour cream and tomato paste, and add it to cabbage rolls, about 30 minutes of cooking. You can add the paste at the very beginning, as you like.

The cabbage rolls are ready. You can serve them garnished with herbs.

Oven-baked vegetarian cabbage rolls with beet tops

 

This recipe is suitable for anyone on a healthy diet and fasting.

Ingredients:

  • Beet tops – 15 pcs.
  • Beets – 1 pcs.
  • Carrots – 2 pieces.
  • Luk – 1 No.
  • Rice – 3 tbsp. l.
  • Hard cheese – 100 gr.
  • Walnuts – 50 gr.
  • Olive oil
  • Salt – to taste
  • Pepper to taste
  • Garlic – 1 clove
  • Low-fat sour cream or yogurt – 100 gr.
  • Greens – to taste

Boil rice.

 

If you use frozen tops, then after defrosting, it will become quite soft, if you have fresh tops, then you need to pour boiling water over it a little.

Grate carrots and beets.

Fry finely chopped onions in vegetable oil until they acquire a golden color. Add carrots and beets, simmer, covered, until tender.

 

Chop nuts, grate cheese. Add them to overcooked vegetables, knead thoroughly, add salt and spices.

Put the filling on the leaf of the tops, about one tablespoon, and wrap it carefully.

We take a baking dish. Lubricate it with oil, spread the cabbage rolls, if desired, they can also be greased with oil.

We put the form in an oven preheated to 200 degrees, and bake for 15 minutes.

At this time, we will make a dressing, for this we chop the garlic and herbs and mix them with yogurt or herbs.

Serve prepared cabbage rolls with garlic sauce.

Lazy cabbage rolls

An excellent option for those who love cabbage rolls, but do not have the time to prepare the classic version of this dish.

Ingredients:

  • A mixture of pork and ground beef – 700 gr.
  • Luk – 2 No.
  • Carrots – 1 pieces.
  • Rice – 1/2 cup
  • Cabbage – 1/2 head of cabbage
  • Egg – 2 pcs.
  • Tomato paste – 3-4 tbsp l.
  • Sour cream – 3 Art. l
  • Salt – to taste
  • Greens – to taste
  • Pepper to taste

Finely chop one onion and mix with the minced meat.

Finely chop the cabbage and scald with boiling water until it becomes soft.

Add cabbage, eggs, rice, salt, spices to the minced meat, knead thoroughly.

In a saucepan with a thick bottom and sides, fry the remaining onion and carrots grated on a coarse grater. Dilute the tomato paste with water and pour over the fry, stew a little and put there cutlets formed from minced meat, everyone chooses the size and shape to their taste.

Simmer until tender. At the very end, add sour cream and herbs.

Cabbage rolls are very juicy, tasty and aromatic. 

Lean cabbage rolls with beans

Ingredients:

  • Beans in tomato sauce – 2 cans
  • Cabbage – 1 head
  • Carrots – 1 pieces.
  • Luk – 2 No.
  • Tomato paste – 2 Art. l
  • Flour – 2 Art. l
  • Vegetable oil to taste
  • Salt – to taste
  • Pepper to taste
  • Greens – to taste

Disassemble the head of cabbage into leaves and boil them with boiling water until they become soft.

Chop the onion finely and fry in vegetable oil until golden brown. Add carrots grated on a coarse grater and mix with beans. The stuffing for cabbage rolls is ready.

We put her cabbage leaf and wrap it. Mix the tomato paste with flour so that there are no lumps. Put the prepared cabbage rolls in a baking dish and pour over the resulting sauce. Put in an oven preheated to 200 degrees and bake for 20 minutes.

Serve cabbage rolls, garnish with herbs.

Double-boiled savoy cabbage stuffed cabbage

Savoy cabbage has a more delicate taste than white cabbage, so it is ideal for making stuffed cabbage.

Ingredients:

  • Savoy cabbage – 1 head
  • Salmon fillet – 500 gr.
  • Rice – 4 tbsp. l.
  • Luk – 1 No.
  • Carrots – 1 pieces.
  • Tomatoes in their own juice – 1 can
  • Vegetable oil
  • Garlic – 1 clove
  • Bay leaf – to taste
  • Salt – to taste
  • Pepper to taste
  • Spices – to taste

Disassemble the Savoy cabbage into leaves, boil with boiling water, so that the leaves become soft.

Boil rice until half ready.

Grind the salmon until it is minced.

Chop the onion and add it to the minced meat.

Add rice, mix everything thoroughly and add salt and spices. Put the minced meat on a cabbage leaf and wrap it.

We put stuffed cabbage rolls in a double boiler and program it for 18 minutes. While the cabbage rolls are being prepared, we make the sauce.

Fry the grated carrots in vegetable oil, add tomatoes, spices, herbs to it, simmer for 15 minutes. After that, squeeze the garlic into the sauce and simmer for another 5 minutes.

The sauce and cabbage rolls will be ready at the same time. Serve cabbage rolls, pouring sauce over them.
