For a quick and gourmet meal, bake the salmon in foil. This fish has a rich taste and tender meat, it is also convenient for the absence of small bones and the speed of cooking.
Recipe for cooking salmon in foil
Salmon in foil with lemon and spices
You will need: – 800 g salmon fillet; – 1 medium onion; – 3-4 cloves of garlic; – 1 lemon or lime; – dried thyme; – salt and freshly ground black pepper; – 300 g of rice; – 1 small carrot; – 100 g of canned green peas; – vegetable oil; – 30 g of butter.
Rinse the salmon in running water and divide into two pieces. Blot each one with a paper towel. Cut out two foil rectangles, drip vegetable oil on them. Peel the onion and cut into rings, place in the first layer on each piece of foil. Place the fish on top, salt and pepper. Cut the lemon into slices right with the peel, place it on the fish. Season with salt and thyme again, adding a little vegetable oil. Roll up the foil so that the fish is in a tight bag. Preheat the oven to 200 degrees. Place the salmon in foil on a baking sheet and place in the oven. The fish is baked for 20-25 minutes. You can serve salmon directly in foil, but it is better to put it on green lettuce leaves and sprinkle with lemon or lime juice.
Salmon can also be baked in one piece, but in this case, the cooking time should be increased by one and a half times.
While the fish is baking, start preparing the side dish. Rinse the rice and boil in salted water for 20 minutes. Boil peeled carrots separately. Cut it into cubes and mix with rice, add butter. Serve cooked salmon with rice garnish and green peas.
Salmon with Provencal herbs
You will need: – 500 g of salmon fillet; – 2 cloves of garlic; – a mixture of Provencal herbs; – 1 tablespoon of olive oil; – 1 teaspoon of balsamic vinegar; – 1 tablespoon of soy sauce; – salt.
Rinse the fish, dry and cut into small pieces. Place them in a deep bowl and cover with a mixture of olive oil, balsamic vinegar and soy sauce. Season the salmon with a little salt and sprinkle with Provencal herbs and garlic, ground in a mortar. Leave to marinate for half an hour.
Cover the baking sheet with a sheet of foil so that the edges hang freely. Place the fish and marinade in the center. Wrap the edges of the foil in the form of a bag, secure it with toothpicks. Place the baking sheet in an oven preheated to 200 ° C and bake for 20-25 minutes.
Serve the fish hot, accompanied by a green salad and a side dish such as fries or mashed potatoes.
