How to cook fried zucchini

  • Flour – 1 glass

  • Sour cream – for dressing

Peel and seed zucchini and grate on a coarse grater. Chop a clove of garlic and mix with the courgette.

Add egg, flour, salt and spices, mix thoroughly. If you think the dough is thin, add a little more flour.

 

Pour the dough in small portions into a preheated pan using a spoon, fry on both sides until tender.

Serve the pancakes with sour cream. By analogy with this recipe, you can make zucchini pancakes, they will have an even more delicate taste and a bright green color.

Scrambled eggs with zucchini

 

An excellent summer breakfast, and given the fact that fresh zucchini and zucchini are available throughout the year, you can cook it all year round.

Ingredients:

  • Zucchini – 1 pc.
  • Luk – 2 No.
  • Tomato – 3 pcs.
  • Egg – 4 pcs.
  • Greens – 1 bunch
  • Vegetable oil – for frying
  • Salt – to taste

Peel the zucchini, remove the grains, cut into cubes. Do not chop the onion very finely. Put the zucchini in a preheated pan and leave to fry a little. Add onions and tomatoes.

 

Beat eggs, add chopped herbs to them. Mix thoroughly and pour over vegetables. Cover and simmer for 7-10 minutes.

This breakfast can be eaten both warm and cold, as a main course, or on bread.

Fried zucchini with sorrel sauce

 

Ingredients:

  • Zucchini – 4 pc.
  • Green onions – 1-2 bunches
  • Sorrel – 1-2 bunches
  • Tomato – 4 pcs.
  • Garlic – 2 cloves
  • Sugar – 1 st. l.
  • Flour – for breading
  • Vegetable oil – for frying
  • Butter – for frying
  • Dill – 1/2 bunch
  • Salt – to taste
  • Pepper to taste

For this recipe, it is precisely young small-sized zucchini that are needed, they do not need to be peeled and seeds removed, but immediately cut into slices about 0,5 cm thick.

Dip them in flour and fry in a preheated pan until golden brown. Put the finished zucchini in a saucepan.

Cooking the sauce. Finely chop the green onions, tear the sorrel with your hands or finely chop.

We heat vegetable and butter in a frying pan, butter gives the sauce a certain need. Fry green onions, then add sorrel, cover and simmer for 7 minutes.

Boil the tomatoes with boiling water to make it easier to peel them off. Chop them finely and add to the onions and sorrel, simmer for another 5 minutes. Add salt, sugar and chopped garlic. Simmer for another 3 minutes.

Put the fried zucchini in the finished sauce, mix and simmer for 5 minutes so that they absorb the aroma and taste of the sauce. Turn off the heat, leave it under the lid for 10 minutes.

Surprisingly fragrant and tender zucchini are ready.

Assorted vegetables fried on skewers

To prepare this dish, it is not necessary to breed a barbecue. It can be done at home as well.

Ingredients:

  • Zucchini or zucchini – 1 pc.
  • Champignons – 6 pcs.
  • Sweet pepper – 2 pc.
  • Luk – 1 No.
  • Garlic – 1 clove
  • Olive oil – for frying
  • Lemon juice – 1 tbsp l.
  • Salt – to taste

A set of fragrant spices – to taste

Cut zucchini into slices, pepper into large slices, champignons, if large, cut in half or into quarters. Cut the onion into large pieces.

Place the vegetables in a large bowl, sprinkle with oil and lemon juice, season with spices and mix thoroughly. Leave for at least 15 minutes to marinate slightly.

String vegetables on skewers in random order. Put the skewers in a preheated pan and fry them until tender, turning over.

Finished vegetables can be sprinkled with chopped herbs.

Zucchini and carrots with sesame cream sauce

Ingredients:

  • Zucchini – 2 pc.
  • Carrots – 3 pieces.
  • Sugar – 2 st. l.
  • Butter – 80 gr.
  • Cream – 1 tbsp.
  • Parsley
  • Tabasco sauce – a few drops
  • Salt – to taste
  • Pepper to taste
  • Sesame – to taste

Cut the zucchini and carrots into thin slices. Heat butter at the bottom of a saucepan and place vegetables. When the vegetables are a little fried, pour them a little water, sugar, salt, pepper. Reduce heat and simmer until liquid boils down.

At this time, we prepare the sauce. Finely chop the parsley. Heat the cream and add parsley to them, a few drops of Tabasco (the amount depends on how spicy you like the dishes), salt. To stir thoroughly.

Sprinkle the finished vegetables with sesame seeds and crush the sauce over the top.
