Flounder cannot be confused with any type of fish, its body structure is too noticeable and unusual. A flat fish with different colors on both sides and eyes on the upper side is easy to cook and very tasty. How to cook a flounder quickly without spoiling the juicy taste and pleasant aroma, we will describe below.
The weight of the flounder can be different, sometimes one kilogram fish is enough to cook dinner, but more often several smaller fish are needed.
Before cooking, the flounder must be peeled, as a rule, skinning is not required for frying, but if there is such a desire, it is better to do this before baking the fish. Using kitchen scissors, cut off the fins of the washed flounder (usually the fish goes on sale already without a head, but if the carcass is whole, the first thing to do is cut off the head), cut the dark skin off the tail with a sharp knife, grab it tightly and remove it like a stocking. Repeat for the white side of the flounder.
Fried flounder
Ingredients:
- Flounder – 1 kg.
- Egg – 1 pcs.
- Lemon juice – 1 tsp
- Bread crumbs / flour – 100 gr.
- Sunflower oil – 2-3 tbsp. l.
- Salt, fish spices – to taste.
Cut the large flounder into pieces, the small one is more interesting to cook whole. Mix the egg, lemon juice, salt and seasonings, coat the flounder on both sides and inside, breaded well in breadcrumbs (or flour, as you like) and send to a heated frying pan with the dark side down. Cook for 5 minutes, turn over, fry over medium heat for 5-7 minutes. Serve with boiled rice, potatoes or fresh vegetable salad.
Stewed flounder with apples
Ingredients:
- Flounder – 0,7 kg.
- Apples – 3 pcs.
- Onions – 2 pc.
- Lemon juice – 1 tsp
- Butter – 20 gr.
- Sour cream – 100 gr.
- Dry white wine – 100 gr.
- Salt, fish spices – to taste.
Peel the apples (preferably green, firm and juicy), cut into thin slices and place in a deep frying pan or stewpan, oiled. Cut the onion into thin rings and place on the apples. Put prepared fish on top (cut large into portions), season with salt, season, pour in wine, a little water and lemon juice, cook for 20-25 minutes over medium heat, covered. Carefully remove the fish, add sour cream to the resulting broth and boil for 10 minutes. Serve the flounder on an apple cushion with sauce.
Flounder baked with tomatoes
Ingredients:
- Flounder – 1 kg.
- Tomatoes – 2-3 pcs.
- Sour cream – 100 gr.
- Lemon cedar – 1 tbsp. l.
- Lemon juice – 2 tbsp l.
- Dill – 1/2 bunch
- Salt, ground black pepper – to taste.
Sprinkle prepared flounder with salt and pepper, pour over lemon juice and put on foil. If there are several fish, it makes sense to pack each one separately. Mix sour cream, lemon zest and finely chopped dill, coat the flounder with sauce. Put the diced tomatoes on the fish, close the foil. Cook the flounder in an oven preheated to 180 degrees for 25 minutes.
