There are many options for how to cook fish in the oven, but they are all, one way or another, divided into several large groups, which include baked fish:
- whole;
- in pieces;
- in foil;
- with vegetables;
- with sauce.
Everything else is variations on the theme. You can cook almost any fish in the oven, this method is good because vitamins are preserved, and you can get by with a minimum of oil, which always pleases people watching the weight.
Filled trout
Ingredients:
- river trout – 2 pcs.
- lemon juice – 3 tbsp. l.
- onion – 1 pcs.
- bell pepper – 1 pc.
- olives – 10 pcs.
- olive oil – 3 tbsp. l.
- greens – optional
- salt, freshly ground black pepper – to taste.
Rinse and clean the fish, remove the heads. Use a sharp knife to make cross-sections on the backs, sprinkle with lemon juice and leave for 5-10 minutes. Peel and chop the pepper, coarsely chop the greens, cut the olives lengthwise into halves, cut the onion into half rings and mix with butter. Spread the fish generously with salt (preferably large) and pepper, put the filling in the belly, put the fish on the foil – ideally each in its own “boat” for ease of serving. Close the foil and send the dish to an oven preheated to 190 degrees for 30 minutes.
Salmon with potatoes
Ingredients:
- salmon fillet – 5-6 pcs.
- potatoes – 8-10 pcs.
- sunflower oil – 1 tbsp. l.
- mayonnaise – 50 gr.
- hard cheese – 100 gr.
- greens – a bunch
- salt, seasonings for fish – to taste.
Rinse fillet pieces and pat dry with a paper towel, peel potatoes and cut into large chunks. Mix the grated cheese, mayonnaise and seasonings. Put potatoes and fish on a greased baking sheet, spread the sauce on top and send to an oven preheated to 190 degrees for 20 minutes. Reduce heat to 150 degrees and cook for another 15 minutes. Sprinkle with fresh herbs when serving.
Cod with sauce
Ingredients:
- fever – 0,7 kg.
- onion – 1 pcs.
- mayonnaise – 2 tbsp. l.
- sour cream – 2 tbsp. l
- dill – bunch
- pickled cucumber – 1 pc.
- sunflower oil – 1 tbsp. l.
- salt, ground black pepper – to taste.
Rinse the fish, peel and cut into portions, dry with a paper towel. Rub each piece with salt and pepper, place in a greased baking sheet. Mix chopped onion, dill, pickled cucumber, sour cream and mayonnaise, pour the sauce over the fish. Cook in an oven preheated to 180 degrees for 25-30 minutes, serve with boiled potatoes.
