How not to spoil crayfish, how to cook them correctly? Here are some tips to help you make your crayfish meal a real culinary feast.
First of all, buy live crayfish. Cooking crayfish that does not show signs of life is fraught with food poisoning. Pay attention to the shell – it must be solid.
- Place the purchased crayfish in a container with clean water for an hour, then rinse each one thoroughly under running water to remove sand and river debris;
- Boil crayfish in a large and wide saucepan;
- Put crayfish in boiling water;
- Add salt to the water at the rate of 1 tbsp. for 1 liter of water, as well as spices to taste;
- Cook the crayfish over high heat for 15 to 30 minutes, the time depends on the size of the crayfish. Do not overcook the crayfish, otherwise the meat will become tough and tasteless;
- If you want to make the dish more tender, add a few tablespoons of sour cream or cream at the end of cooking;
- Other aromatic spices can be added to water: laurel leaves, coriander, cloves, dried dill seeds, etc.
The finished crayfish has a uniform, very bright and rich color;
Recipe for cooking crayfish with dill
Ingredients:
- Live crayfish of medium size – 1,5 kg;
- Fresh dill, possible with seed umbrellas – 1 bunch;
- Black and allspice peas;
- Fresh lemon – 1/3 part;
- Coarse sea salt – 1 tbsp per liter of liquid;
- Vegetable oil – 2 Art. l
Method of preparation:
- Rinse the dill under running water and chop it fairly coarsely. Umbrellas do not need to be cut.
- Be sure to wash the lemon well before cooking. Squeeze the juice into a separate bowl and remove the seeds – they give unnecessary bitterness.
- First, pour water into a deep saucepan, boil. When the water begins to boil, add a chopped bunch of dill, black peppercorns, salt, juice and lemon peel, pour in vegetable oil.
- Let the brine boil for 5 minutes. Rinse live crayfish in cool water. Then, one at a time, dip into boiling water. It is important that the crayfish are alive. In boiling water, the color will instantly change from greenish marsh to reddish.
- Cook for 10-15 minutes, how long it takes to cook crayfish depends on their size – the larger, the longer. The finished boiled crayfish should change from green to bright red. When everything is ready, cover the pan with a lid and let it brew for another 10 minutes.
6. Carefully take out one crayfish at a time, place it on a plate in a slide.
