How to cook beef

A lot has been written about the benefits of high-quality beef, we will not repeat ourselves and reinvent the wheel, but rather consider how you can cook beef in different ways. For the preparation of any of the dishes, chilled beef is best suited, but frozen beef can also be used. Defrost the beef on the bottom shelf of the refrigerator, placing it there overnight or before leaving for work, so that you can cook delicious beef in the evening without delay.

 

Beef stewed in sour cream with mustard

Ingredients:

 
  • Beef – 0,9-1 kg.
  • Onions – 3-4 pcs.
  • Sour cream – 200 gr.
  • Mustard – 1 tsp
  • Wheat flour – 1 tsp.
  • Sunflower oil – 2 tbsp. l.
  • Salt – to taste.

A goose maker, cauldron or a large clay pot is perfect for stewing beef. Rinse the meat, remove the veins and cut into medium pieces, finely chop the onion and put it together with the beef in a bowl, on the bottom of which pour oil. Stir, cover and send to an oven preheated to 180 degrees for 1,5 hours. Mix sour cream with mustard and flour, take out a cauldron and pour the sauce into the meat, salt, stir and cook for another 30 minutes under a lid at the same temperature. Serve with mashed potatoes, boiled rice or pasta.

Beef in a spicy crust

Ingredients:

  • Beef – 1,2-1,5 kg.
  • Garlic – 3 teeth
  • Olive oil – 1 tbsp. l.
  • Breadcrumbs – 100 gr.
  • Pepper mixture – 1/2 tsp
  • Mustard seeds – 1/2 tsp
  • Herbs to choose from – 1 tsp.
  • Salt – to taste.

Rinse a piece of tenderloin or shoulder blade, make cuts in several places with a long sharp knife and stuff with garlic cut into thin petals. Fry the meat in a deep frying pan over high heat on all sides for 5 minutes so that the crust appears and all the juice remains inside. In a mortar, crush pepper, mustard seeds and herbs (if dry), mix with breadcrumbs and salt, breaded the meat well, pack in foil or a baking sleeve and send to the oven. Cook for an hour at 180 degrees. Then open the foil or cut the sleeve and cook for 20-30 minutes. Let stand and serve hot or as a cold appetizer.

Roasted beef covered

 

Ingredients:

  • Beef – 0,8 kg.
  • Butter – 50 gr.
  • Beef seasoning – 2 tsp

In order to cook beef according to this recipe, almost any part of the beef carcass will do, not necessarily the tenderloin. Rinse the meat, cut into portions and sprinkle generously with seasoning. If you have time, you can leave to marinate for half an hour or an hour, but not necessarily. Melt the butter in a frying pan, put the pieces of beef and pour 0,5–0,7 cm of water. Bring the water to a boil, close the lid tightly, reduce the heat to the very minimum and forget about the dish for 2 hours. Do not remove the cover! Serve with any side dish, the meat will turn out soft, but with an appetizing crust.
