The number of dishes that can be prepared from meat is amazing, but in the arsenal of every housewife there are several dishes of stew.
The stew is not only tasty, but also healthy, and we can say that the dishes prepared in this way are dietary, since they either do not use frying at all or they are minimal.
Although experienced chefs still insist that the meat needs to be fried a little so that the fibers close and the meat remains juicy and soft inside.
The second stage of cooking meat is to simmer it over low heat in a sauce or broth. A distinctive feature of stew is its 100% softness, since the cooking time can be stretched as long as you like, the main thing is to achieve the desired result.
For stewing, you can use any kind of meat: beef, pork, chicken, turkey, lamb.
In order for the stew to turn out tasty and aromatic, do not skimp on spices and various sauces.
For stewing, you need to choose dishes with a thick bottom and walls, since in it the meat will acquire the required consistency most quickly.
Rarely, when only one meat is used for stewing, vegetables, beans and various sauces go to it.
Bean Stew
Ingredients:
- Meat – 500-600 gr.
- Smoked brisket – 100 gr.
- Potatoes – 5-6 pcs.
- Luk – 1 No.
- Eggplant – 1 pcs.
- Carrots – 1 pieces.
- Tomatoes in their own juice – 100 gr.
- Boiled beans – 1 cup
- Salt – to taste
- Pepper to taste
- Aromatic spices to taste
Cut the brisket into small cubes and fry a little in a pan. Set aside in a separate bowl.
Cut the meat into small pieces. Fry in a pan in which the bacon was fried. Add chopped onions and grated carrots to it. Fry until golden brown.
Cook the beans in advance, as they take a very long time to cook. Add boiled beans to the meat and do the same with the brisket.
Peel the potatoes, cut into cubes, add to the meat and beans and simmer for 15 minutes.
Add the diced eggplant. Pour in some water and leave to simmer under the lid over low heat.
About 10 minutes before being ready, add tomato paste, salt and spices and simmer a little more.
The fragrant meat stew is ready.
Meat in soy sauce
Ingredients:
- Meat – 600 gr.
- Soy sauce – 100 gr.
- Olive oil – 3-5 tablespoons l.
- Hot pepper – a pinch
- Rosemary to taste
- Parsley to taste
- Salt – to taste
In a skillet with thick walls, heat the olive oil and fry the meat, cut into medium cubes, on both sides, until golden brown.
Pour soy sauce into the fried meat. Add rosemary and hot pepper, if you think that the salt of the soy sauce is not enough, then add salt to taste.
Simmer the meat, covered over low heat, until tender. Serve garnished with herbs.
Meat in beer
An excellent recipe that is very easy to execute and the result exceeds all expectations.
Ingredients:
- Meat – 1 kg.
- Onions – 500 gr.
- Vegetable oil – 1-2 tbsp. l.
- Fragrant Herbs
- Beer – 1 tbsp.
- Salt – to taste
- Pepper to taste
Cut the meat into medium pieces. We also clean the onion mode.
In a frying pan with thick walls, heat the oil, fry the onion until transparent and add the meat to it. Fry on all sides.
Add salt, spices, pour beer into the meat, cover and simmer until the meat is tender.
A good side dish for this meat is potatoes, you can simply stew it with the meat, or you can cook it separately, whichever you prefer.
Stew with cabbage
Ingredients:
- Meat – 500 gr.
- Cabbage – 1 pcs.
- Carrots – 2 pieces.
- Luk – 1 No.
- Tomatoes – 2-3 pcs.
- Spices – to taste
- Salt – to taste
- Vegetable oil – 2-3 tbsp. l.
Cut the meat into cubes and fry in a thick skillet. Add finely chopped onion to it, fry until the onion is transparent, add carrots and continue simmering.
Then add finely chopped cabbage, tomatoes to the meat, pour a little water and simmer until the meat and cabbage are cooked.
Add salt and spices 15 minutes before being ready.
Stewed meat with tomatoes
Ingredients:
- Meat – 600 gr.
- Carrots – 1 pieces.
- Luk – 1 No.
- Tomatoes in their own juice – 1 pc.
- Beef broth – 200 ml.
- Flour – 2 Art. l
- Tomato paste – 1 Art. l
- Green peas – 300 gr.
- Salt – to taste
- Pepper to taste
- Vegetable oil for frying – to taste
Peel the onions and carrots, finely chop the onion, grate the carrots on a coarse grater. Defrost green peas.
Cut the meat into medium pieces.
Boil the beef broth in a separate saucepan.
Pour oil into a saucepan or deep frying pan with a thick bottom, heat up and put all the vegetables in it. Fry for 3-5 minutes.
Roll the pieces of meat in flour and add them to the vegetables. Fry for 10 minutes. When the meat turns golden brown, add tomatoes in its own juice, mix thoroughly, add tomato paste, pour in broth, reduce heat to low, cover and simmer for at least 40 minutes, stirring occasionally.
When 40 minutes have passed, add salt and spices to the meat and continue simmering for another 10-15 minutes, without covering the pan with a lid, so that the sauce thickens a little. After the meat is ready, let it brew for another 10 minutes and serve with a side dish, which can be mashed potatoes or vegetables.
