You should go in search of winter mushrooms in late autumn – early winter. These mushrooms can even be found under the snow at the bottom of the trees. The beginning of the season for collecting winter mushrooms falls on the period of the first frosts, at the end of the calendar autumn. Honey mushrooms grow in families, colonies, choosing trunks, mainly of fruit and deciduous trees, as well as their stumps. These mushrooms are called winter mushrooms because they grow even at low temperatures. If it is above zero degrees, growth continues, if below zero, the mushrooms “fall asleep” without losing their taste. Thus, honey mushrooms can be collected even from under the snow. The main difference between the winter mushroom and its counterparts is the fleecy leg. And the slippery hat distinguishes it from inedible relatives.

Mushrooms can be harvested throughout the winter – in fact, until the beginning of spring. Only weather conditions can make adjustments. The main harvest of winter mushrooms is usually observed from December to March. Mushroom caps have a pleasant taste and aroma, but the legs are harsh. Therefore, many mushroom pickers immediately cut the leg high, leaving it in the forest. Thanks to the vast colonies, it is very easy to collect honey mushrooms. Upon arrival home, honey mushrooms should be cleaned and then boiled. By the way, when pickling such mushrooms are obtained with a pleasant note of sweetness.
