Homemade pies are traditionally made from milk-based dough, but the recipe in which it is replaced with kefir will be no less original. Variations of such pastries with different fillings will allow you to get a new taste.

How to make dough

For the test, take: – 1 glass of kefir; – 100 g odorless vegetable oil; – 15 g of sugar; – 1 teaspoon of salt; – 11 g dry yeast (small bag); – 3 cups flour.

Heat kefir and mix with vegetable oil, add sugar and salt to them. The temperature of kefir should be slightly warmer than room temperature, this will help the yeast to activate, but you cannot overheat it, otherwise the dough will not rise. Dissolve the yeast in a liquid, then mix it with flour, previously sifted through a sieve. This makes the dough more fluffy.

Knead the dough from flour and kefir, which should rise before baking. This takes about half an hour if the yeast is fresh. Yeast-free dough will not turn out so fluffy.

If you plan to use only sweet filling, then you can make the dough sweeter by increasing the amount of sugar to 2-3 tablespoons

What filling to cook for pies or pie

You can use a variety of options here, both sweet and savory. The traditional filling for pies is stewed cabbage mixed with chopped eggs. To prepare it:

– fry half a medium-sized cabbage in vegetable oil over low heat until tender; – boil three eggs, cut them and mix with cabbage; – add salt and spices to the filling to taste.

You can also stuff the pies with a mixture of boiled rice and eggs, or green onions and eggs. Suitable as a filling and minced meat, fried with onions. You can use a variety of fruits, such as sliced ​​apples or peaches, for the sweet filling of the pies. If the fruit isn’t too sweet, sprinkle it with sugar when it’s already crushed. The pieces of fruit should not be too large, otherwise the filling will be inconvenient to place inside the pies.

When the dough comes up, divide it into 20 balls of the same size and leave them to come up for another quarter of an hour, and then mold it into flat cakes, in the middle of each of which put a couple of teaspoons of the filling. After that, cover the cakes with an envelope, shaping the cakes, and place them seam side down on a baking sheet lined with baking paper or oiled with vegetable oil.

Preheat the oven to a temperature of 200 ° C, then place a baking sheet with pies in it for a quarter of an hour. The baking time depends on whether the oven is gas or electric, and is determined by the appearance of the patties. If you want the baking to look like it is glossy, then brush each pie with a brush with egg yolk.
