Very often squid is recommended to be boiled for 3 – 5 minutes. But cooked clams are tough and tasteless. What is the mistake?
The point is that these widespread recommendations are not correct. Squid meat can be boiled until soft in only 2 ways:
- Less than 3 minutes.
- More than 30 minutes. After 30 minutes of cooking, the squid meat will again become soft and tender, but it will lose a lot in weight and volume.
How to boil correctly (3 minutes method)
Boil 2 liters of water in a saucepan, add salt to taste, bay leaf and peppercorns. Let the spice water simmer for another 5 minutes. Then dip the defrosted and peeled squid, one at a time, in boiling water. Gently dip one squid into the water, quickly count to 10 and remove the squid with a slotted spoon. Let the water boil again and lower the next squid.
Squids boiled in this way are incredibly tender, soft and tasty.
