How much to cook boletus

Butterlets are delicious mushrooms, they get their name from their slimy, oily cap. Collecting them in the forest is an exciting activity, but it is even more pleasant to taste dishes made from aromatic mushrooms in winter. Their taste, as well as health safety, will depend on how long to cook butter oil.

Before starting cooking, it is necessary to thoroughly clean and pre-process. First of all, remove the oily cap, clean it of debris, cut a little of the legs. Put in a colander, pour over boiling water, this will help remove the remaining debris and bitterness that is present in the mushrooms.

Their taste and quality, as well as safety for health, directly depend on how much butter is cooked.

Cut large mushrooms into several pieces, leave small ones intact, pour boiling water over, leave for 15 minutes. How much boil oil to cook depends on what they will be used for in the future:

  • for frying, salting – 30 minutes;
  • for pickling, freezing – 20 minutes.

To facilitate the cleaning process, the knife should be periodically rinsed with cold water. To wash your hands after cleaning, just hold them for 10 minutes in a solution from a glass of water and 1 tbsp. l. vinegar.

If the mushrooms are large enough, then it is better to increase the cooking time by 5 minutes, but no more, otherwise the digested boletus will become rubbery and lose its taste.

How to cook boletus properly

Strain the drenched mushrooms through a colander, pour over cold water so that the mushrooms are completely covered with it. Add salt at the rate of 1 tbsp. l. 2,5 liters of water, put on fire. When it boils, remove the foam, continue cooking over low heat.

To prevent the mushrooms from darkening during cooking, it is necessary to add a few crystals of citric acid when boiling. If you make soup from butter, it is better to drain the water after boiling, pour in a new one, continue to cook, then you get a more fragrant, rich broth

Frozen mushrooms, before cooking, you will need to defrost, hold in boiling water for 10 minutes, then pour cold water, bring to a boil and continue to cook over low heat for 20 minutes. For further frying, drain the liquid and let it drain. If for the first courses, then add the necessary ingredients, continue to cook the soup until tender.

Many housewives do not boil mushrooms before frying, but simply pour them over with boiling water, let them drain, pour them onto a preheated frying pan with sunflower oil. This method allows you to maintain a richer aroma.
