Most of us cannot imagine Christmas Eve without a carp. In just a few hours, many homes will have the aroma of fried carp, which, together with the smell of the Christmas tree, will create a unique atmosphere. Of course, there are also people who, due to their diet or preferences, will not swallow carp. Who better at it today? Opponents or supporters of this ‘Christmas Eve’ fish?

What nutritional values does carp have?

Every fifth person eats carp only on Christmas Eve. The opponents of this fish consider it a gift from lakes of inferior quality, with the smell of silt, unpleasant taste and no value whatsoever. When it comes to the taste and preferences, there is nothing to argue about. However, we cannot agree that carp is a worthless fish. It is a treasury of vitamins (B1, B6, B12, PP) and minerals (Ca, P, Fe) that can support our health and well-being.

Poland is the largest carp breeder in Europe, but every fourth carp in Poland is imported. Imported carp are simply cheaper, which is due to, among others, climatic differences affecting the breeding cycle and grain prices.

If you consider carp a fattening fish, you are wrong. In 100g, it has only 110 kcal and is a medium-fat fish, the fat content in carp is 5,6 g per 100 g. In addition, it contains unsaturated fatty acids that are beneficial for health, in an amount quite large for a freshwater fish (0,7 percent). . Good news for dieters is the high protein content (comparable to other fresh and saltwater fish).

How healthy the meat ends up on our Christmas Eve plates depends on what the fish was fed with. If it receives valuable feed and has a chance to gain weight calmly, we can count on maximum health properties. It is believed that carp should be fed with natural feed for three seasons. id = »h24 ″ id =» h25 ″> Its weight after this period will be about 1,5 kg and this is the carp that is the tastiest. In a shop aquarium it is worth checking if the fish moves smoothly up and down and if it does not wobble from side to side.

Fresh or frozen carp?

It is necessary to start with the fact that the purchased carp should not have such a smell. Before being sold for sale, the carp are cleaned by placing them in clean water in a hard-bottomed tank. The unpleasant odor may appear in carps larger than 2,5 kg caught in summer when they are feeding near the bottom. Often such fish are frozen and sold only before Christmas Eve. Lactic acid is released in poorly desilted or transported carp meat, which is responsible for the unpleasant taste.

However, if you come across an uncleaned carp with a distinct smell of mud, leave it overnight in a mixture of milk, onion, celery, parsley, carrot and salt, or rub it with salt, garlic and onion. In the morning there should be no more smell of silt.

It will come as no surprise that fried carp is the least favorable choice, it is very caloric (in breadcrumbs it will have about 160 kcal / 100g) and difficult to digest. Of course, however, if we eat fried carp once a year on Christmas Eve, nothing will happen to us, even during a slimming diet. However, it is worth knowing less caloric alternatives. Carp can be baked in foil or a heat-resistant dish with herbs in the oven (about 140 kcal / 100g) or even better served in jelly with vegetables (about 130 kcal).
