How much and how to store smoked fish in the refrigerator
Smoked fish is an exquisite delicacy that requires special storage conditions. Any violation will lead not only to the loss of the taste of the product. The biggest danger posed by improper storage is the risk of intestinal infection.
How much to store smoked fish
The storage time depends not only on the freshness of the product, but also on the processing methods. According to sanitary standards, hot smoked fish in cool conditions can be stored for no longer than 4 days. In the refrigerator, the period increases to 10-14 days. Using a freezer will increase the storage time, but the taste and texture of the product will deteriorate.
Cold smoked fish will last longer because it contains more smoke and salt and less moisture. This product can be stored in the refrigerator for up to 60 days. In this case, the fish must be properly packed; parchment paper is best suited. This will protect the meat and prevent it from absorbing odors.
How to store smoked fish in the refrigerator
Before sending the fish to the refrigerator, it is advisable to remove other aromatic products. If possible, defrost the appliance and wash all the shelves. For long-term storage, smoked fish needs:
- suitable air humidity;
- a certain temperature regime;
- high-quality ventilation.
If you plan to store the fish for a short time, wrap it in foil or parchment. You can extend the time with a saline solution, the ratio of water to salt is 2: 1. Saturate the resulting liquid in a new, clean cloth and wrap the fish in it. Wrap the top with thick paper and put it in the lower section of the refrigerator close to the wall.
Another packaging option is vacuum containers. With their help, the shelf life is increased by 1-2 months. The condition of the fish must be kept under control: if an unpleasant odor appears, the product is not suitable for consumption.
Before storing smoked fish in the freezer, wrap it in thick paper.
It is better to defrost food naturally. If you don’t feel like waiting, you can use the microwave. In this case, the taste will be more intense. Do not re-freeze reheated fish.
Check the quality of the fish before eating, especially if it has been stored for a long time. White dry plaque is not harmful, it can be easily removed with vegetable oil. Spoiled fish becomes slippery and changes color, and a sour smell appears. It is impossible to save such a product, but it is dangerous to eat.
