How long water do you need to cook crayfish?

For boiling crayfish it is best to use a minimum of water so that the crayfish “languish in their own juice”, but do not float above the water. Keep in mind that crayfish, when boiling, curl their tail and become “more compact”.
To correctly calculate the amount of water for cooking crayfish, do the following:
1. Boil extra water.
2. Dip the crayfish one by one upside down into the water.
3. When all the crayfish are immersed in boiling water, analyze the water level above the crayfish: if it is much higher, then simply drain the excess liquid with a mug.
4. Add salt and spices, cook until tender.
