The traditional method for calculating water in borscht is to measure as many bowls of water as you need to receive. This gives some margin for the liquid to boil off. According to the classic recipe, borscht is cooked from 3 liters of water in a 5-liter saucepan, so that there is free space for laying meat and vegetables. Accordingly, for a 3-liter saucepan, take only 1,8 liters of water.

It is important not to miss the moment when the water boils, after which you need to immediately turn down the heat so that the valuable broth does not boil away. The broth should not boil too vigorously throughout the cooking time. It is not recommended to add water during cooking, it impairs the taste of the dish.
