Products

Chicken breasts – 100 grams

How to make zoni soup

1. Cut the chicken breasts into small pieces.

2. Sprinkle sake chicken pieces (50 grams), rub with salt (1 teaspoon), put in boiling water (0,5 liters), cook for 1 minute.

3. Cut the daikon radish into thin rectangular slices.

4. Cut the carrots into slices and cut flowers from the slices with a metal mold for cutting vegetables.

5. Peel the potatoes, rinse them, put them in boiling water (1 liter), add a pinch of salt, cook for 20 minutes (check the readiness by taking out the tuber with a spoon and puncturing it with a toothpick).

6. Boil spinach in 0,5 liters of boiling water for 3 minutes, rinse with cool running water, squeeze the leaves and cut into strips 4 cm long.

7. Boil 1 liter of fish broth, add 2 teaspoons of soy sauce, 50 grams of sake, a pinch of salt, all vegetables, chicken. Cook for 3 minutes.

8. Fry rice cakes on both sides on a grill rack until golden brown and slightly swollen.

9. Dip the rice cakes in boiling water (0,5 liters) for 20 seconds, remove with a slotted spoon, put on plates one by one.

10. Place the ingredients from the soup on each rice cake, pour the soup.

11. Decorate the zoni soup with figurines cut from lemon zest.

– Originally, zoni soup is a samurai dish. The warriors cooked it in a field kitchen from dried foods and rice cakes.

– Zoni soup in Japan is part of the osechi-ryori New Year’s meal. From the middle of the 31th century, rice cakes were cooked on December 1st as an offering to the gods, and eaten on the morning of January XNUMXst with soup. Zoni symbolizes wishes for success and health next year.

– The name “zoni” means “miscellaneous cooked together”. The ingredients for zoni are different depending on the region of Japan, but the must-haves are chicken, fish, or seafood.
